One thing I love about local foods is that they can happen anywhere the grower can create. I had an incredibly stressful day yesterday. So my friend went on a walk in her neighborhood with me to get it all out. And we stumbled on some of my favorite community members! There were people from and other organizations I recognized. All huddled in the front yard at for some spring learning. I'm so proud of my local foods community.

I do this event every year. It is such a rewarding experience to connect with the community! There are snacks and plenty of free seeds. We will have Guest speakers for only about 20 minutes. Plus a fun contest to win prizes!!
We will get to hear about community based projects ongoing and about other ways to connect with gardening throughout the summer. Take some time to come on out.

I don't know how I got this lucky. I'm working in another room and can hear my kids laughing and chatting and teasing each other while they race ti finish my seed starting for me. They aren't getting paid. These teenagers could be doing a number of other things. Another friend sits chatting with me across the room while we work, and another grinds away at fixing a wall that was so damaged. All if these people are here lifting me up, supporting the vision. I'm so grateful.

Let’s learn about my friend Chase Campbell, owner of Campbellot Bakery. The bakery is based in central Ogden. Campbellot offers many varieties of bread. My personal favorite is the Challah buns! Those make the best egg sandwiches around. On our site you can find the sourdough loaves and the baguette. A few things you should know about
They use local, organic, whole wheat grain that is hand milled on site.

I love people who decide they can do something for greater good, and then just get up everyday, and do it. I admire those people. I hope everyone can think of someone they know when I say that. Today, I want to introduce my friends. and Rita Ebeling
They are a farming couple with a few projects in our area. Most imprtantly, they are working on building This is a vocational advancement garden. This means they help coach unsheltered and unemployed individuals into a stable life and career. They are fundraising to hire their first farm season employees.
This group is working under a non-profit status and is currently fundrasing to support their programming. It is MUNCHIE MONDAY!!!! Read on to learn about this treat.
Local food can be fun, and sweet! You can do local food with fiscal responsibility while reducing waste. In our current food culture, consumers often use less of the life of our foods. We can do more for less, and be gentler on our food systems. We really can have it all. This week, I am going to teach you how to enjoy this tasty treat made with wasted and local foods for around $2.00 to feed 6 people.
What you see here is old donuts, transformed. These particular donuts were old enough that they were being removed from the shelves. I scored them free from the bakery at the unmentionable super-center. However, many local donut shops like sell their day olds steeply discounted, if you want to pay a little for local.
Did you know that in the produce section of most grocery stores, they have clearance fruits? You will need to use it that day, but I got this perfect whole pineapple for 65 cents, just by eating the clearance fruit. It was perfectly ripe, it was sweet and delicious. Nothing wrong with the clearance fruit, if you are going to use it. I always have a plan to use or preserve it the day I buy it. While I used this pineapple fresh, my favorite preservation with minimal special equipment, is to make a syrup or store it in the freezer.
I soaked the old, free donuts that I coveted like gollum with his ring, in an egg batter. I won’t be sharing my very secret batter recipe, but the standard online recipes will be delicious. I used local eggs, butter and milk in this recipe. You can get local eggs on Urban Prairie Agriculture website. The link is in my bio. We are working to offer local butter too. Milk is one of Utah’s largest agriculture commodities. You will find variation in quality and ethics, but you can find local milk at MOST grocery stores.

Anne gave me a jar of her Korean Pickled Carrots, Radish, and Red Onions last week, with this suggested assembly: steamed rice, scrambled egg, buckwheat micro greens (from Urban Prairie Agriculture), and corn. Simple, fresh, and delicious! Sweet, tangy, not to vinegary. I never imagined pickled vegetables would be so easy to make. From Anne: “This recipe takes 15 minutes to prepare and after a good rest time, can be ready in as soon as 2 hours and used for WEEKS! All three ingredients are great in-season produce for our area this time of year.”

MUNCHIE MONDAY!!
Korean Pickled Radish, Carrots and Red Onion:
There's more to pickling than Dill! You will love this gently sweet and tangy quick pickle method.
I love quick pickling recipes.
This recipe takes 15 minutes to prepare and after a good rest-time, can be ready in as soon as 2 hrs. and used for WEEKS!
So why pickle?
Preservation is an incredible benefit to food waste reduction. In this recipe, a cook can use these ingredients in many dishes throughout your meal planning cycle and then reduce waste by pickling the remnants. All 3 ingredients are great in-season produce for our area, this time of year. By using your produce fresh on the first day in a salad, or with sandwiches and wraps you get one great meal cycle placement. Then you can use these ingredients cooked on day 2,3 and 4. Some great use ideas are: soups, stir-fry, and other fun dishes. Then, everything left goes in a jar with brine, and you have weeks more use in those fresh local foods.
When you pickle, it extends the shelf-life of your fresh produce, without compromising nutrients. And in this case, adds to gut health. This recipe offers a fresh, crisp, crunch, and sweet-tangy flavor. Make sure you follow a trusted brine recipe. That's important to get right for the preservation. Get my recipe at the Ogdenite!
When you have a variety of pickled and fermented vegetables, it adds inexpensive versatility to quick meals like:
Quickly scrambled eggs, rice and pickled veggies in a bowl.
Ramen-fresh with fresh veggies, fermented cabbage, and pickled carrots, radish and onion.
Salads- greens, microgreens, tuna, pickled veggies, aioli.
Sandwiches- Bahn MI featured is a salmon Bahn MI.
