Mikkel is the founder of Just crickets - an advanced cricket farm in the Central Coast. He is dedicated to sustainable practices to provide an optimal environment for crickets to thrive in and so they can live longer. All of Mikkel's crickets are bred right there on the farm, and are fed Australian certified organic feed. They are monitored for temperature, humidity, C02 and ammonia in a climate controlled system. At the moment he produces 40kg a week for animal consumption but hopes to have crickets for human appetites in the next 3-4 months - he's aiming for 300-400kg a week! And what does cricket taste like? Unflavoured roasted crickets have an earthy, slight smoky nutty taste - Mikkel is personally a fan!
