It is with great regret that we have had to make the decision to not sell our garlic this season.
The harvest was one of the best, yet during the curing process most cloves have succumbed to rot - a direct result of the incredible wet season (3 floods!!) that we’ve endured this year.
We are already planning next season’s crop and hope to introduce another variety, so watch this space!

We’ve been busy!
The seed garlic was purchased last November, 6 rows prepared, garlic separated, planted and mulched. Then came the rain! Great start!

And that’s the season over! Thank you so much to everyone again for supporting our small business. It is very apparent that you can’t beat locally grown and fresh produce. We constantly have feedback telling us “It’s the best garlic we’ve ever had!” Who would think there is a difference between fresh and store bought garlic? We are constantly told there is!!

FREEZE!!!

Now is the time to buy garlic in bulk and freeze so you have a supply until our next harvest at the end of the year.

Just break the bulb open, gather up those cloves (no need to peel), and pop in a freezer proof bag or container.

The individual cloves don’t stick together, so you can easily use a few cloves without having to defrost the lot! The cloves only take a few minutes to defrost and are easy to peel.

This means you don’t need to buy garlic from overseas!!! (And you won’t have those forgotten cloves pushing up green shoots in your pantry 😉).

Don’t buy foreign when you can buy local!
Stock up while you can and pop it in your freezer! Divide the cloves up and place in a bag or container. No need to peel ( they peel much easier when frozen).

A huge thank you to everyone who bought and promoted the garlic from our farm last season. In particular &smeats . All local Mudgee businesses who were so keen to help promote our local garlic.
As you can see next seasons garlic is shooting through the mulch and has enjoyed the recent rain.
Dave has been hard at it and has sown 8 beds this year - mainly Australian Red and a bed of Australian White. All chemical free!! 👏🏻👏🏻🙌🙌

Hollyoak Farm Garlic is now available in pouches. We have divided the bulbs into cloves and popped them in a snap lock food bag for your convenience. Only $5 per bag (approx weight 100gm). Thank you Rylstone for the perfect plate to make garlic chapatis!

Have you ever tasted black garlic? A customer kindly gave us a sample of Hollyoak Farm Garlic which had been aged until the cloves turned inky black and sticky. This process (in a machine) takes between 30 and 60 days and results in caramelising the garlic - taking the flavour and texture to a whole new level! WOW!

At Hollyoak Farm we grow Australian Red Garlic. It is best suited to the Mudgee climate. It is a turban, hard neck variety.
The bulbs are between 4 - 6cm and the cloves are often coated in a brown skin. Packed full of flavour and goodness.
