Cleaning, always cleaning. This is the thing they don’t tell you about growing mushrooms. Today I’m cleaning rolling racks and mushroom tubs. I’ll also clean the fruiting room floor to ceiling, clean the humidifier and basically give the whole shed a sweep and mop. This and much more cleaning all happens at least once a week and often more. SO, if you ever wanted to grow mushrooms but you don’t like cleaning ( I really don’t) this may not be the profession for you. Haha

We’re a little bit excited about this. Our first taste of Mother fungus grown maitake mushroom. We made plenty of mistakes trying to grow this one, and it was definitely not as pretty as I was hoping , but it had amazing flavour and texture. Hopefully we’ll have lots more maitake coming soon, watch this space!

We’re finally in Saigon wooo hoo, and what an adventure it’s been. 4 hours to Sydney, at the gate only to be denied boarding and off loaded. Met another couple in the same predicament, teamed up in an amazing race style trip around Sydney to camera shops and DEFAT. Finished Thursday around 9 in a Sydney hotel with an emergency passport. Several hundred dollars lighter and so many Uber rides deep. Friday, Vietnamese consulate, then back to airport, Saturday finally heading to Vietnam, this time via Melbourne. Arrive Melbourne around lunchtime for a 4.40pm flight, then 5.40, then delayed again till 6.40, 7.40, then 8pm. Finally flew out at 9.30pm, absolutely exhausted. Landed in Ho chi min 9 hours later, 2.30 am their time, got stuck in customs for another hour plus. Got ripped by the cabby on way to hotel, too exhausted to care. found out hotel was only booked for one person, coughed up another $200 bucks. Finally into our room about 4am Sunday. That’s when I took the first photo. A massive shoutout to .horvath and ( second photo and looking surprisingly good for 40 hours into this adventure) who shared this crazy adventure with us. None of us wanted this, but Without the four of us together this would have been so much worse. We made an amazing team and by the end it felt like we’d known each other for years. Hopefully we can catch up again under better circumstances next time

I finally found some time for a bit of lab work today. Here I’m expanding a few cultures on agar. The little square in the centre is a tiny piece of mushroom mycelium from another agar dish. It will grow to completely fill this dish, then I will put a piece of it into a liquid culture jar and expand exponentially. The liquid culture then becomes the base for our mushroom grain spawn

This is what our local Cole’s is offering as a gourmet mushroom. Mislabeled as shimeji when it’s actually an oyster mushroom, $70 a kilo and basically of a quality that I would be sending straight to the compost pile. If you’re looking for quality gourmet mushrooms hunt down your local grower and give Coles a miss
