We grow all varieties consistently for restaurants, and kits are pulled from our crop lines.

ABOUT COOMER TRUFFLES

David Coomer, former celebrated Chef (remember Star Anise in Shenton Park?) who traded white-tablecloth service for oak trees and truffle dogs down in Manjimup.
These days he runs Coomer Truffles and the new Hound & Hunter fermentary, farming Black Périgord truffles and turning any surplus into legit truffle miso, soy and oils (no fake flavouring on his watch).

In short: a chef’s palate, a farmer’s patience, and zero shortcuts, exactly why top kitchens here and overseas chase his truffles by name.

One of the rarest cultivated mushrooms on the planet 🍄

This isn’t your average oyster mushroom rebranded. The Abalone throws out an oily black asexual stage (called Antromycopsis macrospora) — a weird, knobbly growth that oozes dark spore oil.

Pleurotus Cystidiosus, that "cystidiosus" name? It refers to that oily black goo. It’s wild. A nightmare to manage. Super narrow grow window. Unbelievably slow. High-maintenance, high-reward.

Defiantly not available, we may bring it back in summer...
