Growing beans to dry is a great way to have long lasting food storage and keep the harvest all the way through winter. Cutting off the mature plants at soil level will allow the roots to enrich the soil with nitrogen as they decompose through the winter.

Late summer abundance!! It is hard to not feel overwhelmed at this time of year when every surface is covered with the bounty of the garden. Jars of honey, blackberry, pear ginger lime jam, dehydrated plums and apples. Boxes of tomatoes and peppers ready for salads, sandwiches and processing in pasta sauce and pepper seasoning. The canning supplies never remain in the cupboard long and the dehydrator runs throughout the night. One day the counter will be clear again and the new seed catalogs will be eagerly awaited.
