I LOVE this recipe. It’s quick & easy, the clean up is minimal, and the salmon is PERFECT every time. We’re talking nice & crispy outside, and wonderfully tender, juicy, & buttery inside. I swear I could eat it every single week!

Salmon fillets + gluten-free coconut aminos (or soy sauce) + sesame oil + Maple sugar-free monk fruit (or pure maple syrup) + garlic + ginger + green onion (optional) + avocado oil for greasing.

Served here on a bed of (omit for paleo/keto) cooked in bone broth + mixed green salad with diced bell pepper & celery + grated carrot + green onion + .ca microgreens + **p h**p hearts + Japanese dressing.

Here I used my favourite grain-free keto-friendly pizza crust (pre-made and frozen) but you can use whatever 🍕 crust and brunch-ish toppings work for you.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Try dairy-free cheese & scrambled tofu for a vegan option; throw on ricotta and figs or berries for a sweet pie; or have fun with cream cheese, smoked salmon & EBTB spice. The options are endless!

On my plate:

paleo pizza crust (pre-made with ACV & avocado oil) + pizza sauce + leftover grilled bell peppers & eggplant, diced + grated cheese (dairy or dairy-free) + eggs (see tip below).

This easy-to-make sweet & spicy tofu has been a hit with all of my taste and recipe testers. It’s a healthier, version of the classic General Tso’s Chicken. Serve it with rice (regular, cauliflower, or konjac), noodles, or spiralized or roasted vegetables for a quick, nutritious-and-delicious weekday meal.

I absolutely love tomato season and this simple summer recipe is a personal fave.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
The ingredients are key here. I highly recommend using fresh ripe local tomatoes (I used heirloom), good kosher salt, and a high quality extra virgin olive oil such as .
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Directions (swipe for step-by-step 📸):
⠀⠀⠀⠀⠀⠀⠀⠀⠀
1️⃣ Preheat oven to 400F and line a baking sheet with parchment.
2️⃣ Cut rounds out of the tops of the tomatoes and hollow out enough to hold an egg.
3️⃣ Place on prepared baking sheet, drizzle with EVOO, and sprinkle with kosher salt & pepper.
4️⃣ Bake for 10 min then remove from oven and crack one pasture-raised egg into each tomato.
5️⃣ Sprinkle with more s&p and bake for another 15 to 20 min, or until desired level of doneness. Option to top with diced green onion & grated Parmesan (dairy or dairy-free) or crumbled goat cheese and broil for a minute or two.

If you ask me, the keys to building a better salad bowl are to:

1️⃣ Develop layers of FLAVOUR & TEXTURE. Try a mixture of greens as well as fresh, roasted & pickled veg. Add fruit, fresh herbs, or microgreens. And don’t forget the extra crunch! My fave salads deliver a variety of creamy, chewy, juicy, and crunchy goodness!

Another amazing recipe

I am actually getting on an airplane today for the first time since Covid (hurray for a much-needed vacay with hubs!) but I thought I’d share the cutest little LOW-CARB MEATBALL SLIDERS I made the other week (see below).
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Our plan initially was to fly across the pond and holiday in San Sebastian (one of our fave European foodie/surfing destinations). However, with Covid numbers on the rise again, we decided to switch gears and head west to SoCal instead. The numbers have surged in Cali, too, but we’ll be back in a place we have visited numerous times and our aim will be to keep things low key & spend lots of time outdoors. I’ll share some Laguna Beach pics in my stories, so stay tuned!

If you love basil like me, this vibrant and invigorating basil, spinach & pineapple defines nutritious-and-delicious!

Basil is a wonderful aromatic herb in the mint family. There are an estimated 50 to 150 different species of basil. For this recipe, I used the common sweet or Italian type. It has a floral aroma and spicy-sweet taste, with hints of pepper, anise & mint. While many of us are used to thinking about basil as a flavouring agent, it is also a nutritional powerhouse!

Basil is a rich source of vitamins (esp K) & minerals, as well as disease-fighting, anti-aging flavonoid antioxidants. It also contains volatile oils that have been shown to have as well as antibacterial & immune-boosting benefits.

Needed something fast and satisfying and this tasty 2-minute toast hit the spot and then some.

Here I used my fave sprouted grain bread. Compared to traditional grains, sprouted grains are easier to digest and have lower glycemic index levels (so they don’t spike blood sugar) as well as increased nutrients, soluble fibre & protein.

This combo hit the spot and then some.

The key to a good jammy egg is to transfer your eggs into an ice water bath as soon as the 6 1/2 min cooking time is up. Chill for about 2 min before peeling. The eggs can be cooked and peeled up to 3 days ahead — just store them in an airtight container in the fridge.
