I started making this Potato Casserole as a freezer meal when I was pregnant with Rowan. I’ve since discovered I can tweak it to add frozen vegetables, different meats, different cheese and a LOT bigger batch. Cause this mama needs easy and variable to get dinner on the table every night.
You will find all the recipe details and different meats, veggies, and cheeses I have made this with. But don’t be shy, throw in whatever your family loves!

only one pair of kids is 2 years apart, the rest are all around 3+ years apart. To start it felt too far apart but now that they’re older I just love it!

Yea you’ll find some packaged snacks in our house because, I ain’t pretending to be perfect, but for our food priorities and our budget, we need to make most of it!

Marius’ whiskey jerky is a fave from the book. I was cutting up steaks for a stir fry this morning and I was like YOU KNOW WHAT, this is actually perfect jerky meat. Pivot. Something else for dinner…mamas making jerky! In a few days I will pop it in the dehydrator and bobs your uncle (or your grandfather, in my case)

Milk Kefir is an excellent way to get more happy bacteria into your gut. Even kids can get used to the tangy flavour when you add fruit!
I know, you can buy kefir at the store. But I don’t like the added sugars, gums and other questionable ingredients.
My favourite uses are to add pureed fruit to create a drink like what is available at the store. Or, replace all or some of the milk in smoothies.

Making your own kefir is super easy from kefir grains. It's hard to find non-dairy kefir at the store so you can make it at home!

This is actually based on a true story in which I was in a bummer mood and one of my kids was like ‘let’s go snowmobiling’ and it was nine in the morning and not usually when we go snowmobiling, but we obviously needed a change of pace, so we all got dressed up and went outside and had a grand old time!
