Mole rosa & black cocoa infladita filled with refried beans and queso fresco.
Mole Rosa Recipe 👇

MOLE ROSA DEL ALMA

Makes 5 liters

INGREDIENTS

VEGETABLES:
2 cloves garlic, large
½ red onion, medium & coarsely chopped
4 güero chili peppers, coarsely chopped
1/4 cup canned chipotle puree
1 beet, large

SEEDS AND WALNUTS:
150 g pine nuts
220 g of sesame seeds
100 g of blanched almonds
100 g of peanuts

FRUIT:
1 plantain, very ripe (about 200 g), peeled and sliced
230 g cranberries , dried
150g dried sour apricots (if you can't find them, use more cranberries as regular dried apricots can be too sweet at times)

HERBS AND SPICES:
1 star anise
1 pinch of cumin seeds
1 cinnamon stick
¼ cups dried rose petals
1 bay leaf, dried
1 hoja santa, dried
1 avocado leaf, dried
10 pink peppercorns

40 g white chocolate
2 tsp butter
2 tablespoons olive oil
7 1/2 cups of water
3 teaspoons pink Himalayan salt, or more to taste

DIRECTIONS:

PREP THE INGREDIENTS:

1. Place the unpeeled beets on a tray and bake at 200 C for 30 minutes, alternatively you can steam them until well cooked. Peel beets, cut in chunks and purée in a high speed blender with a little water until very smooth and set aside.

2. In a medium skillet, dry toast all the spices, each one at a time, taking care not to burn them. Use a molcajete or a spice grinder to process into a fine powder, set aside.

3. Heat a tablespoon of olive oil over medium heat. Add the onion, garlic and guero chilies and fry until soft without browning too much, set aside.

4. Add 1 tablespoon of olive oil and fry the banana until caramelized, add the cranberries and sour apricot halves, sautee for a couple of minutes until soft, set aside.

5. Add 1 tablespoon of butter to the pan and sautee the nuts and seeds, add more butter if necessary, set aside.

PROCESS AND COOK:

6. Process the ingredients little by little in a high speed blender. Add enough water to achieve a very smooth and silky puree. Leave the chiles and chipotle last so you can adjust the flavor of the mole based on how hot they are. I also like to adjust the amount of beet puree I add depending on the shade of pink I want my mole to be, so don't add it all at once.

7.Heat a large pot (at least 5 l capacity) over medium heat, add 1 tablespoon of butter and pour the ingredients as they blend. Stir constantly to avoid sticking.

8. Season with salt.

9. Add the white chocolate and cook for another 10 minutes over low heat.

MOLE ROSA DEL ALMA

Rinde 5 litros

INGREDIENTES

VERDURAS:
2 dientes de ajo, grandes
½ cebolla morada, mediana cortada en trozos grandes
4 chiles güeros, cortados en trozos grandes
1/4 taza de puré de chipotle, enlatado
1 betabel, grande

SEMILLAS Y NUECES:
150 g de piñones
220 g de semillas de ajonjolí
100 g de almendras blanqueadas
100 g de cacahuates

FRUTA:
1 plátano macho, muy maduro (unos 200 g)
230 g de arándanos, secos
150 g de chabacanos agrios secos (si no puedes encontrarlos, usa más arándanos, ya que los chabacanos secos regulares pueden ser demasiado dulces a veces)

HIERBAS Y ESPECIAS:
1 anís estrella
1 pizca de semillas de comino
1 rama de canela
¼ tazas de pétalos de rosa, secos
1 hoja de laurel, seca
1 hoja santa, seca
1 hoja de aguacate, seca
10 granos de pimienta rosa

40 g de chocolate blanco
2 cucharadas de mantequilla
2 cucharadas de aceite de oliva
7 1/2 tazas de agua
3 cucharaditas de sal Himalaya rosa, o más al gusto

DIRECCIONES

PREPARAR LOS INGREDIENTES:

1. Coloca el betabel sin pelar en una charola y hornear a 200 C durante 30 minutos, alternativamente puedes cocinarlos al v***r hasta que estén bien cocidos. Coloca el betabel pelado y en trozos en una licuadora de alta velocidad con un poco de agua y procesar hasta obtener un puré fino y apartar.

2. En una sartén mediana, tostar en seco todas las especias, cada una a la vez con cuidado de que no se quemen. Usar un molcajete o un molinillo de especias para procesar en un polvo fino, apartar.

3. Calentar una cucharada de aceite de oliva a fuego medio. Agregar la cebolla, el ajo y los chiles gueros y sofreír hasta que estén suaves sin que se doren demasiado, apartar.

4. Agregar 1 cucharada de aceite de oliva y freír el plátano hasta que esté caramelizado, agregar los arándanos y las mitades de chabacano agrio, freír un par de minutos hasta que suavicen, apartar.

5. Agregar 1 cucharada de mantequilla a la sartén y freír las nueces y semillas, agregar más mantequilla si es necesario, apartar.

PROCESAR Y COCINAR:

6. Procesar los ingredientes poco a poco en una licuadora de alta velocidad. Ir agregando suficiente agua para lograr un puré muy suave y terso. Deja los chiles y el chipotle al final para que puedas ajustar el sabor del mole según lo picantes que estén. También me gusta ajustar la cantidad de puré de betabel que agrego dependiendo del tono de rosa que quiero que sea mi mole, así que no lo agregue todo de una vez.

7.Calentar una olla grande (al menos 5 l de capacidad) a fuego medio, agregar 1 cucharada de mantequilla y verter los ingredientes conforme se van licuando. Mover constantemente para evitar que se pegue.

8. Sazonar con sal.

9. Agrega el chocolate blanco y dejar cocinar por otros 10 minutos a fuego lento.

How we do it ⁠

This black beauty is our germination tent. Most seeds benefit from a dark and warm environment as they germinate, and this contraption allows us to mimic natural conditions of seeds in the ground. ⁠

Beyond that, we use a few tricks that help us get the seedlings where we want them to be. Unbleached brown kraft paper towel between the trays helps to keep the seeds damp, collects seed hulls, and keep the bottom of the tray above clean for when we set them out under the lights. Plus it is completely natural and adds to the content of our compost. The paving stones are also multi-functional in that they help encourage the roots to push downward into the soil, ensure even germination across the entire surface of the tray, and strengthen stems as they push up against the resistance from the weight. Having a completely dark environment also means we can stretch the seedlings once they have been unstacked to make it easier for us to cut at harvest time.⁠
