No. These are not pickled eggs. These are homegrown, unwashed eggs stored in lime water. The lime water fills in all the pores of the egg and encases them in a shell of "glass". Water glassed eggs can last stored at room temperature like this for up to 2 years. This method of preserving raw eggs has been used since the 1800s and was common even into the 1940s and 50s. When refrigerators became a standard kitchen appliance, water glassing almost became a lost art.
You cannot use commercial eggs for this because they have all had the protective coating (bloom) washed off the shell and will quickly go bad. I recently scrambled up 18 eggs that had been stored in lime water for 7 months on an unrefrigerated cupboard shelf and they tasted perfectly fresh (although the yoke seemed a bit thinner than fresh eggs).
Anyhow, if you have an abundance of fresh, unwashed eggs, you might want to try putting some away for later. The ratio is one ounce (by weight) of lime (calcium hydroxide) to one quart of water. Calcium hydroxide is a completely natural, organic ingredient and harmless, although the powder is very fine and may irritate your lungs if you breathe it in. The lime water also quickly dried out the skin on my hands and I had to apply lotion to get them back to normal. When you do use the eggs, be sure to rinse them thoroughly before you crack them or they will taste like lime.
FYI: a gallon size container will store about 40 eggs. Lime is also known as calcium hydroxide. You can buy it in 50 pound bags in the masonry section of the hardware store, or in 1 pound bags in the canning section of the grocery store....often labeled as "pickling lime”.

Morning (I won’t put good because it’s not).
We had the dreaded visit last night 🦊.
This is Milli’s mum posting as Mill is absolutely devastated.
The mess we have woken up to is heartbreaking 💔.
Milli had 3 pekin bantams sitting on eggs and her much loved Cardi C, McFlurry and her stunningly beautiful Lady Amherst pheasant, all gone!!!
We all know that foxes 🦊 eat chickens and ducks when they can but we have always thought we were pretty secure. It has ripped the roof off and taken everything inside 😢.
Our plan today is to secure and double secure all of the other pens as we know after such a banquet last night, they will be back. 😡😡😡😡
Vile fluffy things 🦊. I’m saying this because my beautiful daughter who loves and cares so deeply for her chickens is utterly devastated. 💔💔💔

As it’s getting warmer I was worried that my eggs in my make shift honesty box would go bad quickly as it’s a plastic box.
After a bit of nattering at my dad he has made me a proper little hut and I love it.

Milli lost her beautiful best friend yesterday. Tiger was so loyal, loving and affectionate. She loved Milli and was never far away from her and Milli loved her so much.
Today I couldn’t find Mill and left her alone when I did find her, she is needing time to process this properly as it’s just so painful knowing that she won’t be her neck warming companion anymore 💔💔💔

I haven’t put on my incubator yet this year as I didn’t know what was going to be happening with bird flu and would I be able to sell my chicks and ducklings. Well Mother Nature took it out of my hands and my beautiful Cayuga ducks have hatched off 6 of their own stunning fluffy babies.

I got King Billy as a rescue so I never really knew how old he was. He didn’t seem his usual bright self yesterday so I brought him inside and gave him some vitamins in his water hoping that it would help him and put the spring back in his step. But it didn’t 😢😢😢. My beautiful majestic King Billy has gone. He would always let his ladies eat first and would follow me around the garden (when they were allowed out).
You will be missed my beautiful King Billy 💔🥺💔

I was given a few pheasant eggs to hatch off but only one hatched. Oh my goodness it is quick 😱😂.
I’m trying to handle it as much as possible so hopefully it won’t be so jumpy. To start with we can watch a bit of telly ❤️😂
