Oyster mushroom and cheddar Spanish omelette ! Packed full of wholesome goodness using organic eggs. I learnt how to make basic Spanish omelette when staying in El Campo in Alicante, this is my mushroomy take on it!
Made to order, £8 each for a whole tortilla.
or have a go yourself, recipe below:
(Ingredients organic if preferred)
- 4 medium size potatoes, peeled and sliced very thinly
- 6 eggs
- 150g any mushrooms, finely diced.
- 150g grated cheddar
- plenty of olive oil
- 200ml milk

1. Heat up the olive oil in a well seasoned pan, with the oil bring about 3/4 inch deep. When nice and hot, start dropping in the sliced potatoes one piece at a time, you may need to fry half first until getting crispy, then set them aside on some kitchen roll whilst you do the same to the other half. Add more olive oil to the pan if necessary
2. As the potatoes are cooling on the kitchen roll, fry the mushrooms in the remaining oil until cooked eve starting to crisp. Remove from the pan and let sit on some kitchen roll. Leave the remaining oil in the pan.
3. Beat all the eggs with the milk, add salt to taste, and the stir in the cheese, then potatoes and mushrooms.
4. Add the whole mixture to the pan on high heat until starting to bubble but be careful not to burn the bottom so turn it down to low.
5. Using a spatula gently use it around the edge of the tortilla to prevent it sticking to the sides. Once starting to firm up, stick the pan under the grill to cook the top side, being careful not to burn it.
6. You may need to repeat frying and grilling until you are satisfied that it’s cooked on the inside.

Set aside and leave to cool, until carefully tipping upside down onto a plate.

New product - not mushrooms but just as healthy!
Wild foraged rosehip syrup - naturally high in vitamin C.
Rosehips have over 20 times the vitamin C than oranges, they are also a good source of vitamin A, D and E.
Rosehip syrup was popular in Britain during WW2, when food was scarce, due to their high vitamin content!
£3.50 for a 50ml bottle. These would make excellent Christmas presents for those wanting to boost immunity for winter. Tastes amazing too!

Mushroom coffee is great for focus and cognition and abs increased energy. Don’t take my word for it - many people swear by it.

Shame about the weather and being cancelled, however fun-guys love this weather- perfect for mushrooms and we are pleased to say The Mater Mushroom stall will be making an appearance / tomorrow - that’s Friday 3rd November from around 11am. We have organic Rudd grown blue oyster mushrooms, king oysters, shiitake and shimeji plus a range of mushroom coffee, mushroom powders and tinctures for sale.

Mushroom bouquet! Beautiful mushrooms plentiful on our morning walk today.
The bluey/green capped one I am sure is saffron milkcap? The grey one could be dear shield? Unsure on the other, if anyone could help me out identifying I would be grateful!

With the temperatures dropping, it’s officially mushroom season. Love to see all of the mushrooms fruiting around Ruddington!

Lions Mane mushrooms are about to be harvested.
£3.50 per 100g, I am also doing a mixed box containing 200g lions mane and 200g golden oyster for £10. These special, very odd looking shrooms are nutritious, delicious and contain properties that are neuro-regenerative and anti inflammatory. They are slightly chewy with a lobster/crab like taste.
