Red Vein Sorrel is packed with vitamins C, B and is high in minerals. Throughout history, it has been used not only for culinary purposes but also as medicinal to treat boils and skin disorders as well as sore throats. Native Americans even used it as an antidote for poison.

With its fresh lemon flavor and distinctive red veins, it’s not only tasty but adds a splash of colour mixed into salads and sandwiches, makes an excellent pesto and is an elegant garnish. Limited quantities available so get down early on Saturday or pm to reserve in advance.

Micro Purple Radish is a culinary favourite with its tender, yet pleasant and peppery flavour.
Micro Radish is an excellent source of folate and vitamin C. This little veggie is also much higher in vitamin E than other microgreens. This beautiful little green(Purple?)also contains lignans, enhancing the activity of our white blood cells.
The younger the radish is, the higher it's amount of the biologically active compound glucosinolate, which through metabolism breaks down to sulforaphane.According to a study from 2009 it has shown that the sulforaphane
possess's chemopreventive and anticancer activities.

Brie and bacon is a loved combo, but wait until you try it with micro purple radish! Pulling these well-loved flavours together with the crisp, fresh hit of radish, this flatbread will soon be up there with your favourite snacks

BRIE AND BACON FLATBREAD WITH MICRO PURPLE RADISH
2 folded flatbreads
4 rashers streaky bacon, cooked
6 slices of brie
1 tbsp cranberry sauce
Micro Purple Radish

Warm through for 2 – 3 minutes on a warm frying pan. Turnover and spread with the cranberry sauce. Place bacon slices inside the flatbreads followed by the sliced brie and heat for 3 – 4 minutes until the brie is just beginning to melt.
Add the purple radish and place inside the flatbread and serve immediately.

Micro Red Cabbage is crisp and tender with a fresh, green and earthy sweet peppery flavour.
This powerful microgreen is loaded with vitamins, foremost vitamins E, C and K.
Compared to its mature counterpart, this little micro red cabbage has six times more
vitamin C, 40 times more vitamin E and 69 times more vitamin K. It also contains
vitamins A and B, calcium, iron, magnesium, phosphorus, potassium, zinc, carotene,
chlorophyll, amino acids and antioxidants. Don’t forget that it’s a great source of
protein. Micro Red Cabbage is rich in the amino acid L-and anthocyanins (flavonoid
phytonutrients) that not only act as antioxidants but also function as supporters of the
immune system.
Here’s a vegan quiche recipe for you but it can easily be a standard quiche with a few adjustments.
Ingredients:
Red cabbage Microgreens
1 Pressed and Drained Firm Tofu
1 tablespoon vegan butter
2 cloves of garlic
½ cup onion
½ cup mushrooms
4 tablespoons Cracked No Egg
1 tablespoon Nutritional Yeast
1 tablespoon turmeric
1 tablespoon paprika
1 teaspoon white pepper
1 teaspoon Himalayan salt
Instructions:
In a skillet, melt the butter over medium-high heat. Add the mushrooms and cook till
golden brown. Add in onion and cook till translucent. In a food processor or blender, place drained firm tofu, Crackd, nutritional
yeast, paprika, turmeric, white pepper, and Himalayan salt. Process till smooth. Add the cooked onion, cooked mushrooms, minced garlic, and fresh microgreens (Red cabbage, Broccoli and Oriental mustard) then pulse a few times. But do not over process: you want to
leave a lot of texture. Pour into the crust of your choice, cover with foil, and bake 200c for 25-35 mins. Remove foil for a final 10-20 mins. Remove from oven and let the quiche set for 10 minutes.

Sunflower Shoots have a pleasant crunchy, nutty and fresh flavour. They can be enjoyed solo or added to any dish or smoothie. Great in salads,
sandwiches, wraps, and can be cooked as well

Sunflower Shoots contain exceptionally high amounts of vitamin E and folate. Our little sunflower micro is so nutrient dense and is an excellent source of protein and dietary fibre as well.
The shoots contain vitamins B6, calcium, iron, magnesium, niacin, phosphorus, and potassium. They are considered the most balanced of all of the sources of essential amino acids.
Sunflower sprouts are rich in all of the nutrients that are important during pregnancy.

For a tasty alternative to the everyday potato salad. Try adding sunflower shoots. This is my go to BBQ salad. Always gets the great reviews.

INGREDIENTS
For the salad base:
1 lb mini potatoes (can use any small potatoes)
1 punnet micro sunflower
1 green onion sliced thin

For the dressing:
1 tsp anchovy paste
4 garlic cloves minced
1 tbsp flat leaf parsley chopped
1 tsp Dijon mustard
1 tbsp olive oil
Salt and pepper to taste

Preheat oven to 220c.
In a bowl, drizzle potatoes with olive oil to coat lightly and season with salt and pepper. Place on baking sheets.
Once oven is preheated, put potatoes in oven and roast for about 15-25 minutes. Timing may differ depending on size of potatoes. You want them to be crispy on the outside and tender.
When the potatoes are cooked, set aside to cool.
Meanwhile, mix dressing ingredients together in small bowl.
Once potatoes have cooled a bit, place in large bowl with green onion and microgreens.
Drizzle dressing over and stir to combine.
Season with additional salt and pepper to taste.

Easy cheat is to substitute wholegrain mustard for Dijon, and Hellman’s garlic and herb sauce for the anchovy paste, garlic and parsley

Micro Broccoli is rich in many vitamins and minerals, up to 4x more minerals than its full-grown counterpart. This little micro contains vitamins C, A and K, folic acid, calcium, iron and an important antioxidant called sulforaphane, plus, of course, dietary fibre. In other words, Broccoli contains lots of nutrients that
make us feel good.
It has twice as much vitamin C as spinach which is much higher than oranges. Just 30 grams of micro Broccoli provides well over 100 percent of your daily need of vitamin
K. It is also high in protein compared to most commonly consumed vegetables and a
great source of sulforaphane, with up to 100 times more than its full-grown counterpart.

For those warm nights when you just want a light bite or side.
Micro broccoli salad with Strawberry & Lime Vinaigrette
Ingredients:
Vinaigrette
1 ½ cups diced strawberries
2 Tbs. White balsamic vinegar
1 tsp. Pure maple syrup
2 tsp. Lime juice
3 Tbs. Olive oil
Salad
3 oz. Micro Broccoli
3oz. Salad greens
1 oz. Micro pea greens
2 radishes, thinly sliced
Add edible flowers, and fresh herb sprigs, for garnish, optional
To make Vinaigrette: Combine strawberries, vinegar, and maple syrup in bowl. Let stand 30 minutes.
Strain liquid into small bowl (keeping strawberries separate), and stir in lime juice and oil. Season with salt and pepper, if desired.
Add ¼ cup Vinaigrette to a bowl. Toss with Microgreens. Garnish.
