Dried apricots are typical but once you taste the fresh fruit, it’ll be hard to stop at one, this week we're bringing not one, but two exotic fresh apricot varieties, grown locally in the hills of Kothkai, Shimla.
The more common of the two varieties - Goldbar, is a medium-sized free-stone apricot with an attractive orange and blush red colour. Its flesh is firm with a sweet and sour taste.
The Shakkarpara apricots are a rarely cultivated, hybrid variety between white-fleshed apricot and blonde cherry plum. The name in Farsi (Shakar + pareh) translates to "sweetmeat" in English. It has a fuzzy white with pink blush skin, the flesh is white and somewhat fibrous, sweet, slightly sour and heavily aromatic like a rose.
Not just a pretty fruit, these apricots are rich in Vitamins A and digestive fibre - making them a great snack as well as a popular condiment for summer jams, squash and salads.
