Dried apricots are typical but once you taste the fresh fruit, it’ll be hard to stop at one, this week we're bringing not one, but two exotic fresh apricot varieties, grown locally in the hills of Kothkai, Shimla.

The more common of the two varieties - Goldbar, is a medium-sized free-stone apricot with an attractive orange and blush red colour. Its flesh is firm with a sweet and sour taste.
The Shakkarpara apricots are a rarely cultivated, hybrid variety between white-fleshed apricot and blonde cherry plum. The name in Farsi (Shakar + pareh) translates to "sweetmeat" in English. It has a fuzzy white with pink blush skin, the flesh is white and somewhat fibrous, sweet, slightly sour and heavily aromatic like a rose.

Not just a pretty fruit, these apricots are rich in Vitamins A and digestive fibre - making them a great snack as well as a popular condiment for summer jams, squash and salads.

We know it's July because Chaunsa Mangoes are ready for harvest! That’s the good news about July and the abundance of this OG-favourite mango it brings. Almost saving the best for the end!

Most Chaunsa mangoes have a green-yellow peel and a golden-yellow fibreless fruit at its perfect ripeness. It is considered an elite mango variety due to its size, distinct aroma and layered sweetness. It also has the highest Vitamin-C content among all mango varieties.

The Chaunsa variety is grown abundantly in Uttar Pradesh and Bihar in India, while it is equally hailed and cultivated by the mango aficionados in Multan, Pakistan. Kosara brings you organically grown Chaunsa from our partner farmer’s orchards in Uttar Pradesh.

GI-tagged Mahabaleshwar strawberries are the benchmark in the Indian strawberry varieties with their large fruit size and deliciously sweet and juicy taste. The red soil of the hilly Mahabaleshwar-Panchgani belt in western Maharashtra provides the optimum growing conditions as well as a cool and dry climate for these strawberries.

As a result, Mahabaleshwar strawberries contain up to 80 per cent of water which makes them juicier than other strawberries. The glucose percentage is 10 percent as compared to the 7 per cent seen in other varieties making it naturally sweeter than other strawberries. For the longest time, Kiwi had an exotic fruit reputation, but that has changed in the last decade with farmers in Himachal domesticating the fruit in the presence of desirable growing conditions. Here's a simple Avocado sandwich recipe idea for lunch to stay in tune with all those Saturday-night plans.

You will need:

Multigrain bread (toasted)
1 large ripe Avocado sliced
1 ripe tomato thinly sliced
1 cucumber sliced
A bread spread of choice
Salt and pepper to taste

Method:

Slice Cucumber, Avocado and Tomato and set aside.
Toast the bread slices lightly and put the bread spread generously.
Stack the cucumber, tomato and avocado by sprinkling salt and pepper after each layer and finish off with bread.
That's it, your simple yet delicious lunch is ready!
