I used to think that as long as the vegetable looks fresh where you see it on the market, it should be fresh enough. I couldn't be further from the truth. By the time you saw the vegetable on the market, it has been a few days after harvest depending on how the crops is being handled.
A few days doesn't seem like a problem, but the fact is these few days from harvest had the important nutrients they contain, like Vitamins A, B, C, and E as well as Calcium, Fiber, and Potassium, begin to deteriorate. The longer it deteriorates, the lesser benefits you can get from consuming the vegetable. So, getting fresh vegetable is important for maintaining a good health and fresh vegetables taste great as well.
There has been a movement around the world where restaurant are setting close to farm to promote farm to table experience. The photo is one of the California's outdoor farm-to-table restaurants without wall examples and I think it is great approach.
Right now, Urban Crop is working with farm in Cameron Highland and around Penang area to connect it to the people in Penang city. We are doing so to reduce the time between farm and table.
