It turns out, Hunterville is a pretty funky place. Home to the first-ever commercial brewer’s yeast isolated from the New Zealand wilderness — that goes by the name of WILDING.
A pursuit years in the making, exploring bush and forest all over NZ. Froth Technologies found it, captured it, isolated it, nurtured it, and named it with the help of Steph Coutts. Finally it was sent down to Emerson's for its self-titled, debut brew made with 100% NZ ingredients. A funky, fruity farmhouse ale, with a hint of spice, light malt, and a subtle hoppy finish. "Having something like this that's completely unique and different is pretty exciting." says Emerson's head brewer, Mason Pratt. 🍺

😎 NEW Collab Brew with @panheadcustomales + @hopproductsaustralia + @frothtech 🤝 This experimental IPA combines our new Hazy yeast strain #SPECTRA with HPA's Galaxy variety of #Spectrum hop oil. The Spectrum hop oil contributes to a clean resinous hop profile with gripping aromatics, while the Spectra yeast throws in a fruity ester profile and a med-dry quenching finish. This 6% abv IPA prototype is available on tap this week for a limited time at Panhead venue's, and may appear at a few other local joints. Grab yourself a taste, we'd love to hear your feedback. 🍺 💚

🤝 Frothin’ is an India Pale Lager (IPL), brewed in collaboration with our mates at Double Vision Brewing in Miramar, Wgtn. This IPL marries together the hop-forward character of an IPA with the crisp fermentation profile of a Lager, and was made with 100% Aotearoa ingredients. 👌
🔬Cold-fermented using Froth Technologies #lager #yeast: Krisp | FT50 and boldly dry-hopped for maximum aroma.
🍃 We also experimented with a new #cold dry-hopping technique. Research suggests that cold and brief dry-hopping can actually extract more of the desirable flavour compounds (fruity, citrus) and less of the undesirable ones (vegetal, grassy). Because of reduced exposure time, but equal or greater flavour extraction, the desirable fruity compounds are less likely to be masked by the greener flavour compounds, which get drawn out of the hops over prolonged warm exposure.

Right now we're investigating how each strain's performance changes over its shelf life, once it has been packaged.
We do this by regularly monitoring:
🔬 Viability: how many cells are living/dead,
🔬 Vitality: Cell health measured by acidification power, and
🔬 Attenuation: the degree to which yeast ferments wort

🤖 Yeast rave! Here we have our English Ale strain: FT20 BISCUIT, dancing around like crazy in one of our propagation vessels. English ale strains are known for being very flocculant, which means they group together tightly in clusters, hence the clumpy families zooming around together inside the tank.
