Pleurotus pulmonarius is a widely adapted species, found in the wild in many parts of the world. But, as with many species in Aotearoa, long periods of geographical isolation have caused the local native strains to develop some of their own unique traits and characteristics.
The main differences that we notice in native variants compared to imported commercial strains of this species is that they have a denser, more robust dexture and a deeper flavour. Being well adapted to local conditions also helps, as they're more than happy growing at any time of year without supplementary heating.
You can grow your own native phoenix oyster mushrooms at home with ease, by inoculating logs with dowel spawn, making your own straw or woodchip buckets, or if you want super quick end easy results, a pre made 'mist and grow' native phoenix oyster grow kit made with our favourite local strain 😉

Been snapping a pic every couple of days of this flush of Hakeke / 'Wood Ear' mushroom. A fun and interesting mushroom to watch grow for sure. Liquid culture is pure mushroom mycelium grown in a sterile nutrient broth. The mycelium grows in the liquid by eating the sugars in the broth. After the mycelium has grown through the liquid, it can be sucked up in a syringe and injected into the substrate (usually sterilised grain for making grain spawn). This is an efficient way of delivering pure mycelium culture onto grains for fast and healthy colonisation.
