Air fried rabbit matched with homemade atchara! 🀀

Procedure:
Ibrine mo muna for at least 2 hours yung rabbit meat. After brining, irest mo muna ng 15 mins before air frying.20 mins each side sa airfryer, depende sa laki ng rabbit mo. Voila! May airfried rabbit ka na!!

Brine ingredient:

Salt
Water
1 whole garlic
Peppercorns
Laurel leaves

Note: dapat yung brine mixture mo kasing alat ng dagat!!

Pakuluan mo muna ang brine mixture at palamigin bago ibabad yung rabbit meat.

Adobong rabbit sa gata! Haiyaaa!!

Another all time filipino favorite, adobo sa gata! Naninipa!!

Ingredients:
1 whole rabbit (chopped, adobo style)
1/2 cup vinegar
1/2 cup soysauce
1 cup coconut milk(gata)
1 whole Garlic (pounded)
2 pcs red chili(optional, dagdagan mo kung gusto mong umaatikabo) (minced)
2 pcs laurel leaves
1 tsp peppercorns
1 tbsp brown sugar
1 pinch black pepper(ground)
2 tbsp cooking oil

Procedure:

Marinade: kuha kang malalim na lalagyanan, ilagay mo yung vinegar, soy sauce, garlic, laurel, peppercorn, ground pepper, brown sugar and chili. Haluin mo yung marinade then ilagay mo yung rabbit meat. Ibabad mo atleast 1 hour before cooking.

Cooking: tanggalin niyo sa marinade yung rabbit meat then set aside, wag itapon ang marinade gagamitin natin yan. Magpainit ng kawali, lagay mo yung mantika then yung rabbit meat, sankutsa mo lang sandali para malock ang flavors. Ilagay mo na yung marinade then igahin mo, medium heat lang para pasok na pasok ang lasa. Pag nareduce na to 50% yung marinade mo ilagay mo na yung gata. Hayaan mo ulit kumukulo hanggang mareduce to 50%. Igahin ang gata hanggang mag mantika. Ayos? Tapos ka na! Iserve mo na. Naninipa, adobo sa gata! Haiyaaaaa!! 😏😏😏

Masarap na pulutan! Ayy talaga naman! 🍻🍻

Rabbit pizza!! Pampakalma!!
Game?!

Simulan na natin, turruh!!

Ingredients:
Dough:
2.5cups all purpose flour
1tsp instant yeast
2tsp sugar
1/2tsp salt
2tbsp olive oil
1cup warm water

Toppings:
1/2 rabbit meat fillet
1 whole red onion
2 packs (400g) emborg 3 cheese bake
250g parmesan cheese (shredded)
400g tomato sauce/ puree

Sauce:
1tbsp worcestershire sauce
1tbsp smoked paprika
1/2 tsp liquid smoke
1/8 cup honey
1/8 cup mustard
1/4 cup dark soy

Procedure:
Dough muna! Paghaluin mo lahat ng dry ingredients, flour, yeast, sugar and salt tapos imix mo muna. Pagtapos mo paghaluhaluin lagyan mo ng olive oil saka water tapos i-knead mo na hanggang maging smooth yung dough, roughly 15 mins mo kailangan i-knead yung dough. Pag okay na irest mo muna yung dough then iprepare mo na yung toppings. Kunin mo yung rabbit meat mo tadtarin mo ng parang paadobo(para mas madali himayin) tapos pakuluan mo sa tubig na may asin, paminta at dahon ng laurel hanggang lumambot. Pag malambot na himayin mo (para ka lang magsosopas😁. Mas maganda gawin mo ito ng una kasi medyo matagal palambutin yung rabbit meatπŸ˜‚).

After magrest ng dough mo for about 1 hour, ihugis mo na siya na parang pizza, depende sa trip niyo, circle, square, oblong, triangle pwede din abstract, alam mo na yan malaki ka na.πŸ˜‚ Pag nagawa mo na yung shape ng pizza mo ilagay mo na yung tomato sauce, then yung 3 cheese bake tapos. Eto na malupet, paghaluin mo lang lahat nung ingredients na nasa sauce sa itaas, haluin mo ng mabuti, haluin mo itodo mo baka haluin ng iba! πŸ˜‚πŸ˜‚πŸ˜‚ After mo mahalo ilagay mo yung rabbit meat, hayaan mo masoak yung rabbit meat dun sa sauce quality yan promise! After ma-soak maigi itopping mo na sa pizza mo ung rabbit meat then lagay mo na din yung onions tapos paliguan mo ng parmesan cheese! Pag satisfied ka na sa itsura ng pizza mo ihagis mo na sa pre-heated oven. Ibake mo hanggang mag golden brown yung crust and yung cheese! Voila!! Rabbit pizza!! Kumalma ka ba?! πŸ˜‚πŸ˜‚πŸ˜‚

Rabbit Sisig! Tagalog tayo since lutong pinoy ito. Game?!

All time pulutan ng mga pinoy mas pasarapin pa natin!! Rabbit sisig pampakilig!

Ingredients:

1 whole rabbit meat (skinned/deboned)
5pcs rabbit liver
Rabbit chicharon
1pc big White onion
1/2 cup fried garlic
3pcs green chili (chopped)
2pcs red chili (chopped)
1 egg
1/4 cup premium soy sauce
4tbsp calamansi
1/4 cup mayonnaise
1/4 cup butter (salted)
1tsp salt
1tsp ground black pepper

Procedure:

Rabbit Chicharon:
Ipressure cooker mo ng 20 mins yung buong balat ng rabbit. (kung walang pressure cooker pakuluan mo in high heat ng 1 hr) pag lumambot na yung balat hiwa hiwain mo na ng 1x2 inches (kabisado niyo yan magrarabbit kayoπŸ˜‚) hagis mo sa freezer hanggang lumamig bago mo ibalibag sa kumukulong mantika (takpan mo yung kaldero kung ayaw mong maliguan ng mantika) . Voila!! May rabbit chicharon ka na!! πŸ˜πŸ‘Œ

Sisig:
Ihawin mo yung karne at atay ng rabbit. Habang nagiihaw pagsamahin mo na yung sibuyas na puti, sili pansigang at siling labuyo. Pagsamahin mo narin yung premium soy sauce, kalamansi, asin at durog na paminta. Pagtapos ihawin yung karne at atay ng rabbit, tadtarin mo na. Tadtarin mo maigi, sige pa tadtarin mo pa. Okay?! Okay. Magpainit ka ng kawali tapos lagay mo yung butter, wag mo hayaan masunog ilagay mo agad yung pinaghalo mong sibuyas at mga sili, igisa mo lang sandali tapos ilagay mo din agad yung tinadtad mong rabbit meat at atay. Ilagay mo narin ung hinalo mong toyo (ingat mga sir baka maihalo niyo yung asawa niyoπŸ˜‚), igisa mo lang ng konti tapos patayin mo na apoy. Kaya pa? Konti nalang patapos na tayo. Assembling nalang ng rabbit sisig na nakakakilig. Game?! Kuha ka sizzling plate, painitin mo maigi tapos ilagay mo yung sisig, lagay mo na yung mayonnaise tapos haluin mo lang ng konti. Lagyan mo ng itlog then itopping mo yung pinritong bawang at rabbit chicharon. Voila! May rabbit sisig ka na! πŸ‘ŒπŸ‡

Usagi katsudon! Katsubrang sarap!! πŸ‡πŸ–

Ingredients:

Rabbit thigh fillet, butterfly cut
1 pinch Salt
1 pinch Pepper
2 tsp Sugar
1/2 White onion
1 cup flour
3 Eggs
1 cup Panko
1/2 cup Rabbit stock
2 tsp Mirin
1 tbsp Soy sauce
White rice
1 Scallion, chopped (ping ping ping!!)

Procedure:

Season the pounded rabbit thigh with salt and pepper, and dust with a light, even coating of flour. In one shallow bowl, beat the egg. Put the panko into another shallow bowl. Add thin, even layer of oil to a cast iron pan or skillet over medium heat. The oil is ready when you throw a panko breadcrumb into the oil and it sizzles. Dip the rabbit into the egg to coat.Transfer rabbit to the panko and press it evenly into the meat to get a good coating. Carefully lay the rabbit in the hot oil and cook for 5-6 minutes on one side, until golden brown. Flip and cook the other side for another 5-6 minutes. Drain on a plate lined with a paper towel. While the rabbit is resting, add the rabbit stock, sugar, soy sauce, and mirin to a small bowl. In another bowl, lightly beat 2 eggs. Add a tablespoon of oil to a pan over medium heat, and add the sliced onion. Fry the onions until they’re translucent and slightly caramelized. Pour the stock mixture over the onions. Slice your katsu into pieces and place on top of the onions. Drizzle the egg over everything. Cook over medium low heat until the egg is just set. Serve over bowls of steamed rice, and garnish with scallions.
