**Ingredients**:
- 8-10 Red Claw Crayfish (4 inches)
- 2 tbsp butter
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 2 medium tomatoes, diced
- 500 ml vegetable or fish stock
- 250 ml cream
- 1 tsp paprika
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)

**Instructions**:
1. Blanch the crayfish in boiling water for 2-3 minutes, then cool. Remove the meat from the claws and tails, keeping the shells.
2. Melt butter in a large pot and sauté the onion and garlic until translucent. Add the tomatoes and cook briefly.
3. Add the crayfish shells to the pot and pour in the stock. Simmer for 15 minutes, then strain the broth through a sieve, discarding the shells.
4. Return the broth to the pot, stir in the cream, and season with paprika, salt, and pepper.
5. Add the crayfish meat to the soup and let it sit for 5 minutes. Garnish with fresh parsley and serve.

One of our first timers. It brought almost 170 craylings 😊. After four months (they grow roundabout 1 inch per month) we sold them for 51,000 pesos. Food cost 850 Pesos. When they are bigger they can lay up to 800 to 1,000 eggs. So not really a bad Business😊
