Panoramas don't need to be horizontal - try making vertical ones like this one taken on my iPhone.
Your phone is amazing at seamlessly stitching together all the images into one big pano, but you can help it with complex subjects like trees by rotating the phone around it's own axis, rather than panning in a large arc at arms length, as the latter gives each component frame a slightly different viewpoint, making it harder to assemble a high-quality final image.
