Cheesy Mashed Potato Puffs

Ingredients:
2 cups mashed potatoes (leftover or freshly made)
1 cup shredded cheese (cheddar, mozzarella, or your favorite)
1/2 cup grated Parmesan cheese
1/4 cup green onions or chives, chopped
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper to taste
1/2 cup breadcrumbs (panko works great for extra crunch)
2 large eggs, beaten
Cooking spray or olive oil for greasing

Instructions:
Preheat the Oven:

Preheat your oven to 400°F (200°C) and grease a mini muffin tin with cooking spray or olive oil.
Prepare the Mixture:

In a large bowl, combine the mashed potatoes, shredded cheese, Parmesan cheese, green onions, garlic powder, onion powder, salt, and pepper. Mix until well combined.
Add the Eggs:

Stir in the beaten eggs until everything is evenly mixed.
Form the Puffs:

Using a tablespoon or cookie scoop, scoop the mixture into the prepared muffin tin, filling each cup about 3/4 full.
Coat with Breadcrumbs:

Sprinkle the tops with breadcrumbs for added crunch.
Bake:

Bake in the preheated oven for 20-25 minutes, or until the tops are golden brown and crispy.
Cool and Serve:

Let the puffs cool for a few minutes before removing them from the tin. Serve warm as a side dish or snack!
Tips:
You can add cooked bacon, ham, or veggies for extra flavor and texture.
These can be made ahead of time and reheated in the oven for about 10 minutes.

Breadfruit Fritters with a Hint of Ginger
Ingredients:

Cooked breadfruit, mashed
1 onion, diced
1 sweet pepper, diced
Fresh parsley, chopped
A dash of hot sauce (optional)
1 tablespoon sour cream (optional)
1 egg
1/2 cup grated mozzarella cheese
1 teaspoon freshly grated ginger
Salt, pepper, and your choice of dried herbs and spices (to taste)
A splash of milk
Oil for frying
Instructions:

In a mixing bowl, combine the mashed breadfruit, diced onion, sweet pepper, and chopped parsley.
Add the grated ginger, a dash of hot sauce, and sour cream, if using. Mix in the egg, grated mozzarella, and season with salt, pepper, and any preferred dried herbs or spices.
Stir in a splash of milk to bind the mixture, ensuring the batter has a thick consistency.
Heat oil in a frying pan over medium to low heat.
Spoon the batter into the hot oil, frying each fritter until golden brown on both sides.
Once cooked, drain the fritters on paper towels to remove any excess oil.
