Crockpot Ham, Green Beans and Potatoes

**Ingredients:**

- 1 lb ham, diced
- 1 lb fresh green beans, trimmed
- 1 lb baby potatoes, halved
- 1 small onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- 1 tablespoon olive oil

**Directions:**

1. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent, about 3-4 minutes.
2. In a crockpot, combine the diced ham, trimmed green beans, halved baby potatoes, sautéed onion, and garlic.
3. Pour the chicken broth over the ingredients in the crockpot.
4. Add the salt, black pepper, dried thyme, and dried parsley. Stir to combine.
5. Cover and cook on low for 6-7 hours, or until the potatoes and green beans are tender.
6. Taste and adjust seasoning if needed before serving.

Broccoli, Rice, Cheese, and Chicken Casserole

Ingredients:

2 cups cooked chicken, shredded or diced
2 cups cooked rice
1 cup broccoli florets
1 cup shredded cheddar cheese
1/2 cup grated Parmesan cheese
1 can (10.5 oz) cream of chicken soup
1/2 cup sour cream
1/2 cup milk
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon dried thyme
Salt and pepper to taste
1/2 cup breadcrumbs (optional, for topping)

Directions:

Preheat oven to 350°F (175°C). Grease a 9x13 inch baking dish with non-stick cooking spray.
In a large bowl, combine the cooked chicken, cooked rice, broccoli, shredded cheddar cheese, grated Parmesan cheese, cream of chicken soup, sour cream, milk, garlic powder, onion powder, dried thyme, salt, and pepper. Mix well.
Pour the mixture into the prepared baking dish and spread evenly.
If desired, sprinkle breadcrumbs over the top for a crispy finish.
Bake for 30-35 minutes, or until the casserole is hot and bubbly and the top is golden brown.
Let the casserole cool slightly before serving.
