Cauliflower Crunch Salad with Honey Jalapeno Dressing

Ingredients:

1 large head cauliflower, cut into small florets
1 cup cherry tomatoes, halved
1/2 cup red onion, thinly sliced
1/2 cup cucumber, diced
1/4 cup fresh cilantro, chopped
1/4 cup roasted sunflower seeds
Salt and pepper, to taste
Honey Jalapeno Dressing:
1/4 cup olive oil
2 tablespoons apple cider vinegar
1 tablespoon honey
1 jalapeno pepper, seeded and minced
1 clove garlic, minced
Juice of 1 lime
Salt and pepper, to taste
Directions:

In a large mixing bowl, combine the cauliflower florets, cherry tomatoes, red onion, cucumber, cilantro, and sunflower seeds.
In a separate small bowl, whisk together the olive oil, apple cider vinegar, honey, minced jalapeno, minced garlic, lime juice, salt, and pepper to make the dressing.
Pour the dressing over the cauliflower mixture and toss gently until everything is evenly coated.
Cover the salad and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
Serve chilled, garnished with additional cilantro if desired.

Because the Bee Informed Partnership (BIP) is no longer administering an annual Colony Loss and Management survey, the Apiary Inspectors of America has partnered with Auburn University to create a nationwide survey that continues long-term monitoring of key aspects of the US beekeeping industry and complements BIP’s efforts over the past 15+ years.

All US beekeepers aged 18 and over – from backyard hobbyists to those running multi-state commercial operations – are strongly encouraged to participate. The survey will take 15-30 minutes to complete, and provides the best data on colony losses and management practices across the country.

Visit the https://apiaryinspectors.org/US-beekeeping-survey for more information, and be sure to take the survey before midnight on May 31, 2024! 🐝

Please remember that now till the end of June is honey bee swarm season. If you see a swarm, please contact a local beekeeper to come retrieve the bees. They are not aggressive during a swarm and are just looking for a new location to form a hive.
