No-Knead Rosemary Cranberry Bread with Olive Oil & Sea Salt

Ingredients:

3 cups all-purpose flour

1 ½ tsp salt

½ tsp instant yeast

1 ½ cups warm water

1 tbsp olive oil

1 tbsp fresh rosemary, chopped (or 1 tsp dried)

¾ cup dried cranberries

Flaky sea salt, for topping

Directions:

In a large bowl, mix flour, salt, yeast, rosemary, and dried cranberries.

Pour in warm water and stir until a sticky dough forms.

Cover the bowl with plastic wrap or a towel and let rise for 12–18 hours at room temperature.

After rising, preheat the oven to 450°F (230°C). Place a Dutch oven inside to heat for 30 minutes.

Shape the dough into a rough ball using floured hands.

Carefully place the dough into the hot Dutch oven, drizzle with olive oil, and sprinkle with flaky sea salt.

Cover and bake for 30 minutes, then uncover and bake an additional 10–15 minutes until golden brown.

Cool before slicing.

Prep Time: 10 minutes (plus resting time)
Cooking Time: 40–45 minutes
Total Time: About 13–19 hours

It’s time to Make your own SELF-RISING FLOUR

Self-rising flour, containing pre-mixed baking powder and salt, is ideal for recipes needing a light, tender crumb, like biscuits, pancakes, scones, muffins, and quick breads!
You can make these in big batches and use it for later.

You need:
• 1 cup flour
• 1 teaspoon baking powder
• 1/4 teaspoon salt

Steps:
Combine flour, baking powder, or salt. The ratio is 1 cup of flour to 1 teaspoon of baking powder plus 1/4 teaspoon of salt. Whisk and store in an airtight jar.

Chocolate Chip Cookies
Ingredients
1 cup unsalted butter (2 sticks)
1 cup brown sugar (packed)
½ cup granulated sugar
2 large eggs
2 tsp vanilla extract
2 ½ cups all-purpose flour
1 tsp baking soda
½ tsp salt
1 ½ cups semi-sweet chocolate chips
🍪 Instructions
1. Brown the butter:
• In a medium saucepan over medium heat, melt the butter.
• Continue cooking, stirring often, until it foams and then turns golden brown with a nutty aroma (about 5–8 minutes).
• Remove from heat and let it cool for 10–15 minutes.
2. Mix the wet ingredients:
• In a large bowl, whisk together the brown sugar and granulated sugar.
• Pour in the cooled brown butter and mix until smooth.
• Add the eggs and vanilla extract, and whisk until the mixture is glossy and thick.
3. Combine the dry ingredients:
• In a separate bowl, whisk together the flour, baking soda, and salt.
• Gradually add the dry ingredients to the wet mixture, mixing until just combined (don’t overmix).
4. Add the chocolate chips:
• Stir in the chocolate chips with a spatula or wooden spoon.
5. Chill the dough:
• Cover the bowl and refrigerate for at least 30 minutes (or up to 24 hours for more flavor and thicker cookies).
6. Bake:
• Preheat your oven to 350°F (175°C).
• Line baking sheets with parchment paper.
• Scoop 2-tablespoon portions of dough and space them about 2 inches apart.
• Bake for 10–12 minutes, or until the edges are golden brown and the centers look slightly underbaked.
7. Cool and enjoy:
• Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
