Homemade Krispy Kremes 🥰
Ingredients:

For the Doughnuts:

3 tbsp milk
3 tbsp boiling water
1 tsp dry active yeast
8 oz all-purpose flour (a little under 2 cups, measured and weighed)
1 1/2 oz sugar (about 3 tablespoons)
1 egg
1 oz butter, cold to room temperature (do not melt)
Dash of salt
Enough oil to cover the bottom few inches of a wok, or a deep fryer

For the Glaze:

1/3 cup butter
2 cups confectioners' sugar
1 1/2 teaspoons vanilla extract
4 tablespoons hot water (or as needed)

Directions:

Prepare the Dough:
Activate the Yeast:
In a small bowl, combine the milk and boiling water. Let the mixture cool to lukewarm, then sprinkle the dry active yeast over the top. Stir gently and let it sit for about 5-10 minutes until it becomes frothy.

Mix the Dry Ingredients:
In a large mixing bowl, combine the all-purpose flour, sugar, and a dash of salt. Stir to mix.

Combine the Wet Ingredients:
Add the egg and softened butter to the yeast mixture. Stir until well combined.

Make the Dough:
Gradually add the wet mixture to the dry ingredients, mixing until a dough forms. The dough should be soft but not sticky. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.

Let the Dough Rise:
Place the dough in a lightly greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1 hour or until it has doubled in size.

Shape and Fry the Doughnuts:

Once the dough has risen, turn it out onto a floured surface and roll it out to about 1/2-inch thickness. Use a doughnut cutter or a round cutter to cut out the doughnuts. If you don’t have a doughnut cutter, use a large round cutter for the outer edge and a smaller one for the hole in the center.

Heat the Oil:
Heat enough oil in a wok or deep fryer to cover the doughnuts completely. The oil should reach about 350 degrees F (175 degrees C).

Fry the Doughnuts:
Carefully place a few doughnuts at a time into the hot oil. Fry for about 1-2 minutes on each side or until golden brown. Use a slotted spoon to remove the doughnuts from the oil and place them on a paper towel-lined plate to drain excess oil.

Prepare the Glaze:
Make the Glaze:
In a medium bowl, melt the butter. Stir in the confectioners' sugar and vanilla extract until smooth. Gradually add hot water, one tablespoon at a time, until the glaze is thin enough to dip the doughnuts in.

While the doughnuts are still warm, dip each one into the glaze, turning to coat both sides. Place the glazed doughnuts on a wire rack to allow the glaze to set.

Avocado, Mozzarella, and Tomato Grilled Cheese
Ingredients:

½ avocado, sliced
4 slices mozzarella cheese
4 cherry tomatoes, sliced in half
2 slices multigrain bread (Ezekiel sprouted grain bread is a great choice)
A dab of butter
Directions:

Preheat Your Pan: Heat a non-stick skillet over medium heat.
Assemble the Sandwich: On one slice of bread, layer half of the mozzarella slices, followed by the avocado slices, and then the cherry tomatoes. Add the remaining mozzarella slices on top, and close the sandwich with the second slice of bread.
Butter the Bread: Spread a small amount of butter on the outside of each slice of bread.
Grill the Sandwich: Place the sandwich in the heated skillet. Cook for 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.
Serve Hot: Remove the sandwich from the skillet, slice it in half, and enjoy it warm and gooey.
Prep Time: 5 minutes | Cooking Time: 8-10 minutes | Total Time: 13-15 minutes

This is my Mom's famous Lemon Cream Pie. There are very few words that can describe other than delicious. It is not a Lemon Meringue. It's different because it's creamier. What can I say? It's awesome. There are no other words to describe it other than creamy and velvety, with a custard like filling and just a hint of tartness that goes beautifully with the whipped cream. I added a special garnish of white chocolate curls... that made this pie the best pie I have ever eaten! This is my favorite pie. Well, maybe after Coconut Custard. Well maybe after Sugar Cream Pie. Well maybe after.........

Creamy Old-Fashioned Rice Pudding with a Hint of Cinnamon

Ingredients:

1 cup long-grain white rice
2 1/2 cups whole milk
1/2 cup granulated sugar
1/4 cup brown sugar
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 large egg, beaten
1 teaspoon vanilla extract
1/4 cup raisins (optional)
Directions:

Rinse rice under cold water and drain. In a medium saucepan, combine rice and milk. Bring to a boil over medium heat.
Reduce heat to low and simmer uncovered for about 30-35 minutes, stirring occasionally, until rice is tender and the mixture thickens.
Stir in granulated sugar, brown sugar, salt, cinnamon, and nutmeg. Cook for an additional 5 minutes, stirring frequently.
Gradually stir in the beaten egg and cook for another 2-3 minutes, or until the pudding thickens further.

Baked Spinach Mushroom Quesadillas

Ingredients:
4 tortillas (8 inch)
Olive oil (optional, enough to lightly coat the tortillas)
1 cup shredded mozzarella
1 cup shredded cheddar
3 cups roughly chopped spinach
8 ounces sliced mushrooms

Directions:
Preheat the oven to 400°F (200°C).
Place the mushrooms in a microwave-safe bowl, and microwave for 2 ½ to 3 minutes to soften them.

Drain the mushrooms and set aside.
Lightly brush one side of each tortilla with the olive oil(optional) and place on a baking sheet, oiled side down.

Distribute about half of each of the cheeses over half ofeach of the tortillas. Then layer the spinach, mushrooms, and the rest of the cheeses, and fold the
other tortilla half over top, you can garnich by some mushrooms and cheese.

Bake the tortillas for about 6 minutes, then flip each over and bake for another 6-7 minutes, until the cheese is melted and the outside of the tortillas is brown.

Ingredients:
- 450 grams of flour (16 oz)
- 2 tablespoons of vegetable oil (30 ml)
- 240 ml of hot water (1 cup)

Vanilla Custard Cream Squares
Ingredients:
For the crust:
1 ½ cups graham cracker crumbs
⅓ cup melted butter
¼ cup granulated sugar
For the custard:
2 cups whole milk
1 cup heavy cream
¾ cup granulated sugar
5 large egg yolks
2 tsp vanilla extract
3 tbsp cornstarch
For the whipped cream:
1 ½ cups heavy cream
¼ cup powdered sugar
1 tsp vanilla extract
Instructions:
1️⃣ Preheat your oven to 350°F (175°C). Line a 9x9 inch baking dish with parchment paper, leaving an overhang on the sides for easy removal. 🔥
2️⃣ Prepare the crust: In a medium bowl, mix the graham cracker crumbs, melted butter, and granulated sugar until well combined. Press the mixture firmly into the bottom of the prepared baking dish. Bake for 10 minutes, then set aside to cool. 🍪
3️⃣ Make the custard: In a medium saucepan, heat the whole milk and heavy cream over medium heat until just simmering. In a separate bowl, whisk together the granulated sugar, egg yolks, vanilla extract, and cornstarch until smooth. 🍮
4️⃣ Temper the egg mixture: Slowly pour a small amount of the hot milk mixture into the egg mixture, whisking constantly to prevent curdling. Gradually add the rest of the milk mixture while continuing to whisk. 🥄
5️⃣ Return the mixture to the saucepan and cook over medium heat, stirring constantly, until thickened and bubbling, about 5-7 minutes. Remove from heat and let cool slightly. 🌡️
6️⃣ Pour the custard over the cooled crust and spread it into an even layer. Refrigerate for at least 2 hours, or until the custard is set. ❄️
7️⃣ Make the whipped cream: In a large bowl, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form. 🥄
8️⃣ Spread the whipped cream over the set custard layer, creating an even, smooth top. Cut into squares for serving. 🍰
9️⃣ Garnish with additional whipped cream or white chocolate shavings if desired. Serve chilled. 🌟
