Peach Cobbler Cinnamon Rolls
Ingredients:
For the Dough:
3 1/2 cups all-purpose flour
1 packet active dry yeast
1 cup warm milk
1/4 cup granulated sugar
1/4 cup unsalted butter, melted
1 tsp salt
2 large eggs
For the Filling:
2 cups fresh peaches, peeled and chopped
1/2 cup brown sugar
2 tbsp butter
1 tbsp ground cinnamon
1/4 tsp ground nutmeg
For the Glaze:
1 cup powdered sugar
2 tbsp milk
1/2 tsp vanilla extract
Directions:
Prepare the Dough: In a small bowl, dissolve yeast in warm milk with a pinch of sugar. Let it sit for about 5 minutes until frothy. In a large mixing bowl, combine flour, sugar, and salt. Add melted butter, eggs, and the yeast mixture. Mix until a dough forms, then knead for 8-10 minutes until smooth and elastic. Cover with a damp cloth and let rise for 1 hour or until doubled in size.
Make the Filling: In a small saucepan, melt butter over medium heat. Stir in chopped peaches, brown sugar, cinnamon, and nutmeg. Cook for 5-7 minutes until the peaches are soft and the mixture thickens.
Shape the Rolls: On a floured surface, roll the dough into a large rectangle. Spread the peach mixture evenly over the dough. Roll the dough tightly into a log and cut it into 12 equal pieces. Place the rolls in a greased baking pan, cover, and let rise for 30 minutes.
Bake and Glaze: Preheat the oven to 350°F (175°C). Bake the rolls for 20-25 minutes, or until golden. In a bowl, whisk together powdered sugar, milk, and vanilla extract for the glaze. Drizzle the glaze over the warm rolls before serving.
