Straightforward Energy

Cream Cheese Chicken Enchiladas
8 oz. cream cheese, softened
2 cups shredded cooked chicken
1 can diced green chilies
1/4 cup chopped fresh cilantro
1/2 teaspoon ground cumin
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
2 cups shredded cheese
8-10 flour tortillas
In a large bowl, mix together the cream cheese, shredded chicken, green chilies, cilantro, cumin, garlic powder, onion powder, and 1 cup of shredded cheese.
Spoon the chicken mixture onto each tortilla, roll them up and place them seam side down in a greased 9x13 inch baking dish.
Pour the enchilada sauce over the top of the tortillas, making sure they are all coated.
Sprinkle the remaining shredded cheese on top.
Cover the dish with foil and bake for 20-25 minutes.
Remove the foil and bake for an additional 5-10 minutes.

Melt In Your Mouth Caesar Chicken

Ingredients:

4 chicken breasts boneless, skinless
1 cup Caesar salad dressing
½ cup sour cream (optional)
1-1½ cup Parmesan cheese grated

Instructions:

Heat oven to 375F and spray the inside of an 8" x 11" baking dish with cooking spray.
If the breasts are uneven thickness, pound them (placed in a Ziploc bag and on a flat surface) to an even ¾"-1" thickness using a meat pounder. Sprinkle the breasts (both sides) with grated Parmesan cheese & freshly ground black pepper, and place them in the prepared baking dish.
Whisk together Caesar dressing and sour cream in a small bowl. Pour the Caesar/sour cream mixture over each breasts then sprinkle grated Parmesan cheese on top.
Place the prepared chicken in the oven and bake at 375F for 30 minutes or until a meat thermometer inserted in the thickest part of one of the middle breasts reads 150°F.
Turn the oven to broil and broil the breasts an additional 2-4 minutes or until the chicken turns golden brown. It can burn quickly, so watch it closely. When done, a meat thermometer should register 165F when stuck into the thickest part of one of the middle breasts.
Remove from the oven, cover loosely with foil and allow chicken to rest 5-10 minutes before serving. If desired, garnish with chopped parsley. Enjoy!

PINEAPPLE CHICKEN KABOBS

Ingredients:
3 tbsp soy sauce
3 tbsp brown sugar
1 tbsp olive oil
1/4 tsp ground ginger
1 tsp garlic powder
4 boneless chicken breast, cut into 2″ pieces
1 20 oz can pineapple chunks, drained
(or use fresh pineapple too)
1 large purple onion; chopped large chunks
1/2 c your favorite bbq sauce
( I love Sweet Baby Rays brand)

Directions:

1. In a shallow glass dish, mix the soy sauce, brown sugar, olive oil, ginger, and garlic powder. Stir the chicken pieces, pineapple and onion into the marinade until well coated. Cover, and marinate in the refrigerator at least 2 hours.
2. Preheat grill to medium-high heat.
3. Lightly oil the grill grate. Thread chicken and pineapple alternately onto skewers.
Grill, turning occasionally, basting with bbq sauce. Cook 15-20 minutes or until chicken juices run clear.

NATIONALS UPDATE

I am so happy to share some great news with the membership. The response to our June 22 letter, asking you to let us know whether you are coming to Nationals, was met with an overwhelmingly positive response. Entries in all events are above what they were at this same time last year, and you have sent in an additional $26,000+ in sponsorships in the past two weeks!! This is SO HEARTWARMING!!! The membership has risen up to make their Nationals possible. I hope every member is proud of our response as an ASCA Family. One member on the Nationals FaceBook group said we are ASCA STRONG, and I couldn't agree more!

Because of YOU, the 2023 ASCA National Specialty will go on! Unless you put a hold note on your entry check, your checks will be deposited on July 19, and the 2023 Nationals Committee will move forward with our plans.

ENTRIES ARE STILL OPEN until August 31 per the premium. (Please see page 15 of the premium for entry information.) As of today, we have 245 exhibitors and we have 56% of our entry fee goal, so we are still hoping to see a flood of entries in the next six weeks, but because of your generosity and because enough of you let us know you were coming, we will be celebrating our Aussies and each other and the awesome friendships that ASCA brings us in Bryan in October!!

OUTBACK STEAKHOUSE ALICE SPRINGS CHICKEN RECIPE
Ingredients:
4 boneless skinless chicken breasts, pounded to 1/2 inch thickness
Lowry’s Seasoning Salt
6 bacon slices
1/4 cup regular mustard
1/3 cup honey
2 Tbsp. Mayonnaise
2 teaspoons dried onion flakes
1 cup sliced fresh mushroom (I omitted because my family does not like mushrooms)
2 cup shredded Colby/Jack cheese
Directions:
1.) Sprinkle and rub the chicken breasts with seasoning salt. Cover and refrigerate for 30 minutes.
2.) While the chicken is in the refrigerator, cook bacon in a large skillet until crisp. Remove bacon and set aside. *Do not discard grease.
3.) Saute chicken in the bacon grease for 3 to 5 minutes per side, or until browned. Place chicken in a 9″ × 13″ casserole dish or pan.
To make the Honey Mustard:
1.) In a small bowl, mix the mustard, honey, mayonnaise and dried onion flakes.
2.) Spread some of the Honey Mustard over each piece of chicken, then layer with mushrooms, crumbled bacon, and shredded cheese.
3.) Bake in a 350° oven for 30 minutes, or until cheese is melted and chicken is done. Enjoy!
