This week on "he ole Homestead was a busy one. I between rain, errands, and things I have since forgotten we did more weeding. The rabbits are eating the transplanted herbs, predators got one of our turkey hens, and you can't even tell we mowed!

Yes, it's spring indeed.

one black hen keeps following us around to each section we are working in, I suspect in the hopes of getting some fresh turned bugs and worms.

What's going on in your neck of the world?

Happenings on the Homestead this week.

We've been busy pulling blackberries out and cutting them down. Digging blackberry crowns is hard. And you can hardly tell we've done anything. We did get the garden area for this year worked up, and we were going to begin planting only to be thwarted by the rain. It chased us inside.

This week, we transplanted several plants after unearthing them from ... you guessed it, blackberries. That allowed me to transplant a bunch of herbs into a new herb garden/area around the flag pole.

Then, while the rain pounded down, I attempted to stamp some clay for plant labels.

This week on the Homestead...

Where to start... we've been drying oranges to make some teas this week. They look so pretty and smell Heavenly. 😍 of course we continue to dry some staples as well.

More strawberries were planted last week, but I forgot to mention it, so I'll mention it this week.

Between church, raindrops, 2 trips for doctors appointments in Tacoma, we have planted some seeds for the garden we will have this year. Our bigger area will take a rest year this year.

A new lilac was spotted blooming as well as a dogwood tree. We are contemplating making lilac syrup for some Lilac Lemonade. It's sounds devine!

Hoping for a bumper crop of lavender and huckleberry this year to make simple syrups with as well.

Who's got eggs? We do! 3-4 dozen available this weekend. We just ask for a $4 a dozen donation toward their feed.

Our girls eat a variety of things, and get kitchen scraps like lettuce, melons, yogurt occasionally, herbs, and more. While they don't "free range" they do have a good sized space.

They occasionally get fermented feed, and they eat bugs, and scratch up other crawly insects at their leisure.

Reserve your eggs today!

This has been a busy week here on the farm. We decided to let the female goose try to hatch her eggs. She has been very diligent (along with a "sister") sitting on them. When we cleaned the goose pen, DH and I just cleaned around her. Of course that meant lots of hissing in typical goose fashion.

Turkey's are laying. I never even thought about them laying so I am building them a box. We have two females.

I was hoping to get some seeds in the ground and covered but the life hindered that just a bit. Of course, we had a boatload of other things going on off the homestead. This has been a very busy week.

There are so many great books out there that can help you in a homesteading journey. These are just a small sample of what we have on our shelf. One of the most read for us is Back to Basics. It is well-loved. We also have loved our 12-month Harvest book, but I'm not sure you can even buy it anymore!

What I like to do, if possible, is borrow a title that interests me from our public library and if it indeed is something I want to buy for reference, then I buy it. If I didn't do that I think the chicken house would be full of books! 🤣😂🐥🤷

What types of books have you used getting back to your homesteading roots?

Egg Pizza anyone? This is sure to be a hit in your family!

https://www.tasteofhome.com/recipes/brunch-pizza/

1 tube (8 ounces) refrigerated crescent rolls (you could use biscuits too, I have before)
1 pound bulk turkey (or your favorite) sausage
5 large eggs
1/4 cup 2% milk
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup frozen shredded hash browns (I generally have a baked potato or two that I use left over from a meal during the week)
1 cup shredded cheddar cheese
2 tablespoons grated Parmesan cheese

Directions
Preheat oven to 375°. Separate crescent roll dough into 8 triangles and place on an ungreased 12-in. round pizza pan with points toward center. Press over the bottom and up the side to form a crust; seal perforations. Set aside.
In a large nonstick skillet, cook sausage over medium heat until no longer pink, 5-7 minutes, breaking up sausage into crumbles. Drain and transfer to pizza crust. Wipe out skillet. In a bowl, beat eggs, milk, salt and pepper; pour into same skillet. Cook and stir over medium heat until almost set; spoon over sausage.
Sprinkle pizza with hash browns, cheddar cheese and Parmesan. Bake at 375° until crust is golden, 25-30 minutes.

Dinner tonight! https://www.tasteofhome.com/recipes/sausage-tortilla-breakfast-bake/

Turkey Sausage Tortilla Breakfast Bake
Ingredients
8 ounces bulk lean turkey breakfast sausage (I make our own and freeze it into patties, etc)
1/2 cup canned diced tomatoes and green chiles
6 corn tortillas (6 inches)
1/2 cup shredded Monterey Jack cheese
1/4 cup shredded pepper jack cheese
2 green onions, chopped
6 large eggs
3/4 cup fat-free milk
3/4 teaspoon paprika
1/4 teaspoon ground cumin
Optional: Reduced-fat sour cream, salsa, and additional chopped green onions

Directions
Preheat oven to 350°. In a large skillet, cook and crumble sausage over medium heat until no longer pink, 4-6 minutes. Stir in tomatoes and green chiles.
Coat a 9-in. deep-dish pie plate with cooking spray. Line pie plate with 3 corn tortillas. Sprinkle with half each of sausage mixture, Monterey Jack cheese, pepper jack cheese and green onions. Repeat layers.
In a bowl, whisk together eggs, milk, paprika and cumin; pour slowly over layers. Bake, uncovered, until just set, 30-40 minutes. Let stand 10 minutes. Cut into wedges. If desired, serve with sour cream, salsa and additional green onions.

Our Story

Our family moved to Lakebay in the spring of 2014 to start on the adventure path God placed before us. We have 23 chickens, 8 geese, 1 dog, cat, fish, and are considering a couple goats.

The White Homestead consists of Darling Husband, Darling Daughter, and myself, The MOM. This summer is the summer of fixing several broke things, so I will try to update that as we go along.
