Super Moist Chocolate Cake with Perfect Ganache Topping 🍰
This indulgent chocolate cake is ultra-moist, rich, and topped with a silky ganache that takes it to the next level. Perfect for birthdays, celebrations, or when you're simply craving chocolate heaven!
Ingredients
For the Cake:
1 3/4 cups all-purpose flour
3/4 cup unsweetened cocoa powder
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1 tsp salt
2 cups granulated sugar
2 large eggs
1 cup whole milk (or buttermilk for extra moisture)
1/2 cup vegetable oil
2 tsp vanilla extract
1 cup hot water (or hot coffee for a richer flavor)
For the Ganache:
1 cup heavy cream
8 oz semi-sweet chocolate, finely chopped
2 tbsp unsalted butter (for shine)
Instructions
1. Prepare the Cake Batter
Preheat Oven: Set oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.
Combine Dry Ingredients: In a large bowl, sift together the flour, cocoa powder, baking powder, baking soda, salt, and sugar.
Mix Wet Ingredients: In a separate bowl, whisk together the eggs, milk, vegetable oil, and vanilla extract until well combined.
Combine Wet and Dry: Gradually add the wet ingredients to the dry ingredients, stirring until smooth.
Add Hot Liquid: Slowly pour in the hot water (or coffee), mixing until the batter is thin and smooth.
2. Bake the Cake Layers
Divide Batter: Pour the batter evenly into the prepared cake pans.
Bake: Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
Cool: Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
3. Make the Ganache
Heat Cream: Warm the heavy cream in a saucepan over medium heat until it just begins to simmer (do not boil).
Melt Chocolate: Pour the hot cream over the chopped chocolate in a bowl. Let sit for 2-3 minutes, then whisk until smooth.
Add Butter: Stir in the butter for added shine. Let the ganache cool slightly until it reaches a spreadable consistency.
4. Assemble the Cake
Layer the Cake: Place one cake layer on a serving plate. Spread a layer of ganache over the top.
Top with Second Layer: Add the second cake layer and spread ganache over the top and sides.
Decorate: Use an offset spatula to smooth the ganache, and optionally garnish with chocolate shavings, sprinkles, or fresh berries.
