Hearty Home Cooked Meal Idea 🥘 😋

Shepherds PIE (feeds 4)

Ingredients:
- 1.5-2 lb ground beef
- 10-12 small gold potatoes (32oz)
- 3 tsp thyme
- 3 large carrots 🥕 (chopped)
- 3 large celery (chopped)
- 1 yellow onion 🧅
- 4 tbsp sour cream
- 2 tsp garlic powder
- 13.76 oz crushed tomatoes 🍅
- 2 tbsp flour
- 3 tbsp beef stock
- 1 cup white cheddar cheese 🧀

Directions:
1) PREP
- Dice potatoes 1/2 inch pieces
- Trim, peel, halve, and chop carrots into 1/4 inch pieces
- Dice celery
- Finely chop onion

2) MASHED POTATOES
- boil potatoes 15-18 minutes in salt water, drain, and return to pot
- mash potatoes w sour cream, 1tsp thyme, 3 tbsp butter, splashes of water until creamy but thick
- salt/pepper to taste

3) FILLING
- While potatoes cook, drizzle oil in medium ovenproof pan; add carrot, salt/pepper, 2-3 mins
- Add celery, onion, and large drizzle oil, season w/ salt/pepper, 5-7 mins
- Add garlic powder, 2 tsp thyme

4) BEEF
- Add beef to filing, salt/pepper, cook until beef cooked and broken up, 4-6 mins
- Add flour

5) FINISH FILLING
- Add crushed tomatoes to beef
- 3/4 cup water
- Add beef stock
- Turn off heat
- Taste and season w/ salt/pepper

6) FINISH
- Top beef filling w/ even layer mashed potatoes; leave gap around edge of pan
- Evenly sprinkle cheese over mashed potatoes
- Broil low for 3-4 mins (don’t burn)
