Beef Wellington with a Mushroom Duxelle Twist 🍄🥩✨
We made a delicious Beef Wellington tonight, featuring blue oyster, black pearl oyster, and chestnut mushrooms for a savory duxelle! 🤤 Check out the pics below to see the process from start to finish.
**Ingredients:**
- Blue oyster, black pearl oyster, and chestnut mushrooms 🍄
- Garlic and onion for the duxelle
- Prosciutto 🥓
- Filet mignon, seared and basted in Dijon mustard
- Puff pastry 🥐
**Instructions:**
1. **Mushroom Duxelle**: Finely chop the mushrooms, garlic, and onion, then sauté until golden and the mixture has a rich, earthy aroma. This is your base of flavor.
2. **Searing the Filet**: Season the filet mignon with salt and pepper, sear it on all sides until browned, then brush generously with Dijon mustard. The mustard gives it a delicious tang and helps the duxelle stick.
3. **Assembly**: Lay out the prosciutto slices, spread the mushroom duxelle on top, and wrap the filet in this prosciutto blanket.
4. **Puff Pastry Magic**: Roll out the puff pastry, wrap it around your prosciutto-wrapped filet, and bake until golden and flaky. Your filet should end up medium-rare at 135 degrees internal temperature.
