🦨Mama skunk must’ve come and gotten this little guy while we were sleeping last night!

🏡Just like when we lived in Nashville, we are still thankfulky surrounded by wildlife in a our current neighborhood even if it is considered in town. We started to get worried about this cutie because his pacing was pretty consistent for hours along with some wobbling & disorienation.

🌿Thankfully, with the help and advice from a couple locals, we left our gate open, a plate of cat food out, and little dude must’ve made his way out of our fence enclosure.

💚Forever grateful for those that rally together to help even the smallest of creatures on this blossoming, incredible planet.

🫙This starter has rotated from our kitchen windowsill to the top of the fridge and back again, smooshed between my kombucha and sauerkraut jars, happy as can be!

☀️Made for this weekend’s round of hikes, this recipe was adapted from the Korean Vegan’s recipe in her book, The Korean Vegan. Slightly crunchy on the outside, fluffy on the inside, it was a great snack to and from the Keweenaw this weekend!

🌯Deluxe Breakfast Burrito!🍅

Homemade smokey seitan filets, homemade cashew mozzarella, brown rice, lentils, fresh jalapeños, veggie tofu scramble with herbs & spices, local mixed lettuce, guacamole, Serrano pepper salsa, coconut bacon, and lightlife bacon strips (yay for OG minimal vegan products! We usually stick with mostly plants but it’s nice to treat ourselves sometimes. Even though I haven’t eaten meat for over half my life, sometimes it hits different when we get to have a reminder of a childhood dish, you know?).

It’s a magnificently warm day today in Marquette & there are very few things I love more than starting my day making a hearty meal for the husband. I’ve been starting my mornings with a loaded veggie/fruit/protein/chia smoothies as I slowly make my way back into a weight training schedule and, I will say, recovery is always fastest when I hit the high nutrient density early in the morning. Now, if I could only get my pre-pregnancy stamina and endurance back BUT -damn- am I thankful to just be in prime health while growing this little kumquat!🍊

🥕One of the greatest joys in my life has almost always been cooking. Since turning vegetarian in high school and now being vegan for fourteen years, the excitement of collaborating with vegetables to create diverse & vibrant meals for myself and my loved ones neevvveerrr gets old!

🍅This nutrient-dense lasagna was made with lemon & dill marinated tofu, Italian seasoned lentil-walnut filling, homemade oil-free marinara, sautéed spinach, and shredded carrots. To me, the more colors on our plates at the end of the day, the better.

🧄We have contouring gotten the immense honor of leading exceedingly healthy lives & I literally am beaming every day over the future of showing our little sweetheart the wonders of the plant kingdom!

🌻Okay, so favorite vegetable variety you’re growing this year in the garden, Go! I’m probably not going to get to our garden this year so I gotta live vicariously through you, you know!?

☀️The sun was out today. It was a light-hoodie weather sort of afternoon. We wandered around a local bookstore and he held me hand but made sure it swung (like always) so my Fitbit logged all my steps. And the plant nursery was full of smiling families, wandering botanical lovers. We found decadent chocolate bars and smiled at Lake Superior…What a beautiful day to be walking around our new town, this precious place.🌲
