Long post - Details Part 2: Finish
Then there is the finish: even pasture raised and grass fed cattle are often grain finished which means in the last 2+ months of their life, they receive mostly or exclusively grain/corn and often also a mixture of additives - this is done to fatten them up and also get the desired meat marbling, and also more bulk and larger cuts which some customers prefer and sometimes describe as a more “buttery taste”.

We currently grass finish, which means also in the last 2 months the cattle still receive almost all grass (we do not say 100% because we handfed with some treats of non-GMO feed).

We can do that and still achieve marbling since we selected our cattle breed for that particular purpose and raising method: Ours are Belted Galloways, the "Oreo cows", which are particularly well adjusted to grass fed raising, their meat marbles naturally on grass when they mature between 36 and 48 months of age.

The decision about the finish is a matter of opinion and taste - some compare it to the analogy of butter and olive oil. There is lots of good to be said about either, but some strongly favor one over the other and some use both and that is fine. We personally like grassfed, grass finished for everything including our steaks and filets, we like the taste and are convinced of the stronger health benefits.

Whatever the finish, preferring local pasture raised grassfed should be a no brainer though and is always superior in our opinion.

Long post - details part 1:
What we offer is pasture raised grassfed and grass finished Belted Galloway Cattle from our farm in Paris, TN, dry aged for 21 days before custom butchering.

The typical industrial or commercial way to raise cattle is in feed lots with sometimes as little as 150sqft/animal, and grain fed, often given antibiotics since the living/feeding conditions are such that they need them to stay healthy. They get fat fast with that diet and can be processed at 12-24 months of age, then wet aged for 7-14 days: faster = more profit.

Ours are born and live on our pasture (currently about 0.5-1 acre/animal, "pasture raised"), fed almost entirely with grass ("grassfed") and live a stress-free happy life as a cow/steer. That already produces leaner meat with a more favorable nutritional profile (e. g. omega-3, CLA).

raised means for us that we humans do everything to let our cow, calves and steers live their life the best and most natural way possible while being cared for: that means nutrious organic grass, clean water, ample space, shade, cover from elements - and a herd to socialize with. We strieve for stress free handling by making sure their human contact is usually pleasant, so no yelling or hitting - but head scratches and hand feeding. We have been asked about antibiotics. We never give prophylactic antibiotics ever - and don't need to and will never. If an animal would get sick, we call the vet and that animal would of course be treated including antibiotics. But since they live in healthy conditions, they really do not get sick. We only had to treat one single cow in the past 5 years (for pink eye, so topical treatment only) - she is a breeding animal so she'll live to be 20.

Option 1 - unwashed: can store your eggs at room temperature up to 3 months - but the general recommendation is to wash them before use.
Option 2 - washed: need to be stored in the refrigerator up to 2-3 months, no further washing needed.
Our default is washed but you can pre-order unwashed.

One of the reasons farm fresh eggs taste so much better is because they are FRESH. Sounds like all eggs should be but store bought eggs are allowed to be 60 days old by the time they hit the shelf and if they sit in the store or your fridge for a bit, they may be 3 months old by the time they get eaten 🍳.

Our little farm...

Westfalia Farms is a 90 acre farm on rolling green hills between Paris and the Kentucky Lake. Farmers by heart and training, we try an organic and fresh approach to farming, our animals and the land. We raise organic grass fed and grass finished cattle (belted galloway), chicken, Tennessee walking horses, make hay and manage USDA conservation land with abundant wild life including a growing quail population. Our farm is our dream come true for quality of food and quality of life. The farm is operated by the Knoeppel Family, originally from Hagen, a small town in the region of Westfalia in Germany - that is where the name comes from. The hills back home look a lot like the hills here in beautiful Paris in Tennessee.
