Quillin Leather & Tack moved to Main Street in Paris, KY in 1982. We're a full service tack and leather goods shop and one of the largest "Custom Shops" in the nation and hand crafts over 17,000 halters a year. With only a few exceptions, every leather item they sell is made in their Main Street workroom by

craftsmen with a combined 80+ years of experience. Quillins' 12 employees produce a variety of products, from key tags, belts and dog collars to halters worn by leading stallions and multi-million dollar Keeneland sales toppers. Quillins supplies local and international customers and boasts a client list that reads like the whose who of the thoroughbred industry. My goal with my sourdough journey has been to make yummy discard recipes and soft sandwich loafs. I love toast with butter and grilled cheese sandwiches and a soft crust. I think I finally found the one that fits the bill! They are so good and now I’m going to start doing some experimenting a little bit to get it a more sour flavor!

Advice needed. First loaf ever! I had no idea it would take 40+ days to grow a starter, but I feel so satisfied that I did it in my own (with lots of help from this group).
I’m shocked that I loved my first loaf so much. I thought I was destined to have one of the horror story attempts, but I guess that’s the result of researching it avidly for 10 months before getting started. 😂
I do need advice though - the crust was too thick and hard, especially on the bottom. How can I fix that?

I am not sure why but I love making sourdough bread! I am a crazy lady with it. Once I got it all figured out (most of it at least) I am unstoppable!!! This is what works for me and my family and friends love it. I think the special ingredient is Olive Oil. Adding that to you sourdough is a game changer to me. Loaves are so soft on inside and nice crunch on outside. Perfect for toast, sandwiches, French toast, spreads or just a little honey butter on it and actually it’s so tasty you don’t need to put anything on it!
This is for 1 loaf
Starter-I mix equal parts warm water and bread flour to feed my starter. Amount just depends in how many loaves I wantt yo make and how much startet is in my jar. Typically I do a 1-3-3 ratio
150g active starter
315 g warm water
16 g Olive oil
450 g bread flour
10 g salt
Instructions:
I am adding directions and pictures below. I’ve been overwhelmed with questions. Hope this helps.
Mix starter, warm water and olive oil then add bread flour and salt-mix well then cover leave on counter 1 hour
Do one set of stretch and folds then cover again for 30 min and repeat stretch and folds. Do this 2 more times then cover and let bulk ferment for 3-6 hours.
I then shape. I dump on floured surface and fold two sides in onto itself and then roll up from other end and put in floured banneton basket and cover and put in fridge overnight. Next morning I put in loaf pan, score top and cover with a second loaf pan-bake 30 min covered and then 12 min uncovered in 450 degree oven.
I use just regular loaf pan-Faberware is my favorite. This is for 1 loaf.

My brother did get it in 2 days. It was $20.00 to ship it. He told me it was the best bread he ever had and It arrived perfect!🥰 Thank you all for your kind words and support 💞! I added a picture of what it looked like when it arrived to him. It looks like it might of gotten a little banged up on the side, but overall it kept it's shape and was a success 🥳.
Wish me luck everyone🤠! My brother has been wanting to try one of my sourdough loaves but lives 800 miles away. I froze it and vacuumed sealed it, hopefully it will make it like this with 2 day shipping?🤞

Our Story

Owned and operated by Ralph & Donna Quillin & Son Vince Grupposo, Quillin Leather & Tack is a full service tack and leather goods shop and the largest "custom shops" in the nation. Halters are made in small batches and their "made to order" philosophy sets them apart as a provider of quality leather goods and service world wide.

Quillin’s has been in business since 1982, based out of their Main St. shop in Paris, KY. On average they make over 17,000 halters a year with 20 employees working in the shop. They also produce many belts, dog collars and personal leather goods plus feature an onsite engraving shop and complete repair service. They recently announced an expansion into a second 4000 sq foot location Downtown Paris on Main St. which will serve as a second showroom and primary halter production space for their growing Export Market.
