No-bake peanut butter balls 😋💖
Ingredients:
1 cup creamy peanut butter
1/4 cup unsalted butter, softened
1 teaspoon vanilla extract
2 cups powdered sugar
2 cups semi-sweet chocolate chips
1 tablespoon coconut oil or shortening (optional, for smoother chocolate)
Directions:
Prepare the Peanut Butter Mixture: In a large mixing bowl, combine the peanut butter, softened butter, and vanilla extract. Gradually add the powdered sugar, mixing until a thick dough forms.
Form the Balls: Roll the peanut butter mixture into 1-inch balls and place them on a parchment-lined baking sheet. Chill in the refrigerator for 20-30 minutes to firm up.
Melt the Chocolate: In a microwave-safe bowl, combine the chocolate chips and coconut oil (if using). Heat in 30-second intervals, stirring in between, until the chocolate is fully melted and smooth.
Dip the Balls: Using a fork or a toothpick, dip each peanut butter ball into the melted chocolate, ensuring it is fully coated. Place the dipped balls back onto the parchment-lined sheet.
Set the Chocolate: Allow the chocolate coating to set by refrigerating the peanut butter balls for at least 30 minutes.
Serve: Once the chocolate is firm, transfer the peanut butter balls to an airtight container and store them in the refrigerator until ready to serve.
