Endive this week! This is a Batavian variety, also called escarole - related to chicory and radicchio. Slightly bitter, but delicious. I usually include this in a mesclun (spring mix).

Red Rubin Basil sprouting. Amazing reddish-purple color with a delightful aroma! This basil takes something like 3 weeks to reach microgreen maturity (feels like an eternity). Like a parent I like watching them grow - so I'll be patient.

Beet microgreen with its beautiful red stems and leaves makes a great garnish. Also very useful to enliven salads and sandwiches.

Our purple radish seeds from last week turned into beautiful microgreens! They're not as spicy as the other radishes I've grown, but taste amazing. Very useful as a colorful, unique garnish as well.

Baby sorrel (also called spinach dock) beginning to grow! Popular as a sauce and for lining baking pans for fish recipes. Tastes like lemons.

A super hardy perennial, it can survive harsh conditions, and as such is a staple in parts of eastern Europe and central Asia.

Never grown Fenugreek before. I read it tastes like maple syrup so pretty excited and curious to try it. I guess it's an ingredient in some curries and pastirma. Easy to grow and nutritious.

Found a great recipe for a microgreen bloody mary mix. Turned out amazing - strange that it tastes like tomato without actually having any tomatoes. No processed sugars, gums, or nightshades, not to mention full of vitamins and minerals.

I probably should have garnished it better at the end though lol.

Ingredients:

2 oz. kale microgreen
2 oz. broccoli microgreen
1 oz. radish microgreen
5 baby cucumbers
1 green apple
1/2 lemon
2 celery stalks
5 grams of ginger
salt and pepper
I used some Tabasco sauce for a kick
your favorite vodka

Using a juicer, juice all the ingredients. Garnish with what you have.

Cilantro microgreens almost ready for harvest. They take 21 days or so to grow to maturity, so rather slow growing, but worth it. Taste very peppery and pretty much like you'd expect a small cilantro to taste. Delicious though, well worth the effort.

You have to break open the cilantro seeds by using a rolling pin (scarify I think it's called) to increase the germination rate. Pretty interesting.

Slow Bolt Arugula microgreens that I've started growing. It's very peppery and spicy so I can't eat too many - but it's great in my salads for an added kick. Also doesn't hurt that Arugula is packed with vitamins and nutrients.

A close-up of some Speckled Pea seeds I started Tuesday. They soak in cold water for 6 hours, then they go into a strainer and I spray them down 6-8 x a day until they sprout.

Curled Cress sprouting!

Cress is high in vitamins B, C, K, folic acid, fiber, and is widely used in folk medicine to treat asthma. Not sure I believe all of this, but hey, they're pretty tasty and intensely peppery.
