• 1 cup all-purpose flour
• 1/2 cup unsweetened cocoa powder
• 2 teaspoons baking powder
• 1/2 teaspoon sea salt
• 1 1/2 cups mashed bananas (about 3 medium bananas)
• 1 large egg (room temperature)
• 1/4 cup unsalted butter (melted)
• 1/4 cup olive oil or avocado oil
• 1 cup coconut sugar
• 1 teaspoon vanilla extract
• 1/2 cup pecans (chopped - optional)

1. Preheat the oven to 350°F.
2. Prep muffin or cupcake tin with liners and set aside.
3. In a medium bowl combine flour, cocoa powder, baking powder, and salt, whisk to combine or if you have time, it is better to sift all the ingredients. Set aside.
4. In a large bowl, mash the ripe bananas with a fork until no large chunks are left. Add the slightly cooled melted butter, oil, vanilla, and egg. Stir until fully combined.
5. Whisk in coconut sugar until smooth.
6. Add the dry ingredients to the wet ingredients, and gently fold in with a spatula, careful not to overmix.
7. Fold in the chopped walnuts, if using.
8. Transfer batter into the prepared liners until 3/4 full
9. Bake for 25 minutes and check for doneness, or until a toothpick inserted into the center of the bread comes out mostly clean, with no raw batter on it. If still needs to bake more, check on it every 5 minutes.
10. Once fully baked, remove the pan from the oven and let cool.
11. Refrigerate or Freeze in a freezer bag to store.

There's a prevalent myth out there...that people can multi-task. The reality of it is, we don't. We can really only truly focus on one thing at a time. What we CAN do though is task stack (say that 3 times fast).

Task stacking looks something like, knowing the laundry will take a while to run but not take much time to set up, so you get that going, then you put the dishes in the dishwasher to run, AND THEN you apply yourself to the thing that requires you to really be hands on and focused. Suddenly you're doing 3 things at once. Magic! Hopefully, then you go back to the top of your circle because you could take care of the hands on item and you now go back and finish out the things that had been running independently. I have found this to be SO useful in my day to day.

Have you ever felt like you've been staring at a problem for so long that you just can't see your way around it? As if the sheer act of focusing on something has blinded you to a simple solution that's been staring you in the face the whole time?

I've found that oftentimes it helps me to focus on other things and let the issue marinate in the back of my mind. Then, WHAM the super obvious answer that was alluding me it right there!

Our brains are always working to solve our problems, whether we are focused on them or not. Sometimes setting it to the side is the best thing you can do to bring forth a solution.

The hot button topic nowadays seems to be mindset, so let's talk about it. What have you done recently to change your mindset? Have you read a book, listened to a podcast, spoken to a friend, changed a small habit? It doesn't have to be anything astronomical. Sometimes the small things in life have the largest impact. Do you feel the need to purge with the changing of the seasons, kids' birthdays, or the start of the new year? We've all heard of spring cleaning, but for me, I find that I go through multiple iterations of this. I can't stand clutter, but always find that it makes its way to me. Between holidays, birthdays, and friends' birthdays, we always have new things coming into our home. And our kids' tastes are always changing. Thus the continuous state of cycling through what is played with.

Some things are donated and others are stored to cycle in and out. How do you handle the influx?

Do you have a large age gap between your kids? Siblings need time to be individuals with their parents. I think this is especially highlighted when there is a large age gap. We try and give our littles individual time as much as we can. Our older one will usually get some sort of trip every 3 months or so to do something she likes that our youngest wouldn't be able to interact with as much.

What do you do to manage the gap?

I've brought this up in other posts - meal prep! Here it is in action in our house. These are super easy to make, reheat, and eat on the go. Added bonus, your kids get their protein and carbs all at once!

Choose whichever bacon and batter you prefer (I made mine from scratch and made it thinner than normal so it would squeeze out easily). I air fried my bacon to make it super crispy and to remove excess grease as well!

"Will you play with me?"

Our kids won't be asking us this forever. This is something that has been more and more top of mind for me lately. So much so, that I made it one of my commitments for this year. I think one of the thoughts many of us have when we're told to be present is that it has to take a lot of time. In reality, sitting on the floor and playing whatever your kid wants to play, even if it's just for 5 minutes can make them feel seen and connected to you. They appreciate it SO MUCH and you'll be building a foundation for a relationship that will outlast those dreaded tween and teen years. You'll be building a relationship that will have them wanting to come back to you once they've explored life at more of a distance.

It's 1 month until Valentine's Day!

Whether you find this holiday fun and exciting, or think it's a greeting card holiday here to swindle us out of money, it's still almost here.

I like to think of it as a time to show those you love in your life, whether it's your partner or your best friend, some attention and gratitude for being the wonderful people they are. For the record, my best friend has 100% been my valentine before and it was such a fun day!

We've all heard people go on and on about bedtime routines for kids. There's so much advice out there. I laid out some super simple tips here that I use personally for my little one and big kid.

I think we focus a lot on kids' bedtime routines because they're important and when our kids don't sleep our lives feel TERRIBLE. But let me ask you, have you set a bedtime routine for yourself? Have you realistically looked at when you wake up vs when you need to go to sleep to get at least 7 hours (you probably need to be in bed earlier than you think)? Do you give yourself wind down time? I literally put this in a schedule recently and have done my best to stick to it. I've probably gotten more sleep that I have in a long time because I looked at everything logistically and by getting my kid to bed on time, I'm able to get MYSELF to bed on time.

I know I talk to my moms on here a lot, but dads, I see you too!

Moms tend to be in the spotlight when it comes to the kids - but do you also take the time to sit with them? Do you ask them questions and really get to know who they are? Most dads nowadays have really stepped up when it comes to being more involved with their kids. If this is you, kudos! It's so important and makes such a difference.
