🍲 Southern Squash Casserole 🥒
Ingredients:
4 cups yellow squash, sliced 🥒

1 large onion, chopped 🧅

1 cup grated cheddar cheese 🧀

1/2 cup mayonnaise 🥛

1/2 cup sour cream 🥛

1 cup crushed Ritz crackers 🍘

1/4 cup melted butter 🧈

2 eggs, beaten 🥚

1 tsp salt 🧂

1/2 tsp black pepper 🌶️

Optional: 1/2 cup chopped green bell pepper 🌶️

Instructions:
Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish. 📏

Cook the Squash: In a large pot, bring water to a boil. Add the sliced squash and chopped onion. Cook until tender, about 10 minutes. Drain well. 🥒🧅💧

Mix Filling: In a large bowl, combine the cooked squash and onion, grated cheddar cheese, mayonnaise, sour cream, beaten eggs, salt, and black pepper. Mix well. If using, add the chopped green bell pepper. 🥒🧅🧀🥛🥛🥚🧂🌶️

Assemble Casserole: Pour the mixture into the prepared baking dish. 🍲

Prepare Topping: In a small bowl, mix the crushed Ritz crackers with the melted butter. 🍘🧈

Top the Casserole: Sprinkle the cracker mixture evenly over the top of the casserole. 🥘

Bake: Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the casserole is bubbly. 🕰️🔥

Serve: Allow the casserole to cool slightly before serving.

Pecan Pie Balls 🥧🌰
Ingredients:
- 1 cup chopped pecans
- 1/2 cup packed brown sugar
- 1/4 cup corn syrup
- 1/4 cup butter, melted
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1 cup graham cracker crumbs
- 1/4 cup powdered sugar, for coating
Instructions:
1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. In a bowl, combine chopped pecans, brown sugar, corn syrup, melted butter, vanilla extract, cinnamon, and graham cracker crumbs. Mix well.
3. Roll the mixture into 1-inch balls and place them on the prepared baking sheet.
4. Bake for 10 minutes or until golden brown.
5. Let the balls cool for a few minutes, then roll them in powdered sugar to coat.
6. Serve and enjoy these tasty Pecan Pie Balls!
