Just in time for those pumpkin pies! Whip some up this weekend and have it ready!
You really can use almost any kind of pumpkin for purée, but people typically use Sugar Pie Pumpkins. Last year was my first year using Jarrahdale pumpkins for purée, and oh my gosh you guys it was delicious!!! They are my favorite to grow because they look so pretty as decor, so I was absolutely delighted to find out they are delicious as well
I store in mason jars or vacuum seal, and freeze it in 2 cup portions, since thats what the recipes I use it for call for.
If you freeze in mason jars, only use wide mouth jars and fill to 3/4 full to leave room for expansion. Mine lasts in the freezer all year till the next season’s pumpkins are ready!

As promised, I’m finally ready to share our Maple Bacon bone recipe!!
It’s a very simple, nitrate free recipe. Recipe should be enough for a 3.5 pound slab of pork belly, and can be multiplied as needed.
Brine in the refrigerator for 4 days before smoking. Because it is nitrate free it will not last in the refrigerator for days and days, but that is never an issue for us. Slice, vacuum seal, and freeze after it’s smoked and pull it out of the freezer as needed!!

1/4cup coarse sea salt
1/3 cup Maple Syrup
1/3 cup Brown sugar

We had a giant windstorm last night and power is out all over the region. All we could do was lay in bed listening to the wind howl and make crashing sounds, praying that the house and barn stayed safe.
This morning I woke up to the sun shining, looked out the kitchen window to see the barn still standing, and made my coffee on the fire with so much gratitude! Then I remembered my new Vintage Santa mug! I’m kinda obsessed 🎅🏻

When I was little, I would count the days till we would go to my Aunts house, because she would always make these rolls!!! As soon I got old enough to make them, I asked her for the recipe and the rest is history.

Every year I think I have it all planned out to have a large amount of tomatoes ripe at the same time for a giant batch of sauce, but it never works out that way. There is always something that pops up that prevents that from happening and then I have ripe tomatoes trickling in all summer and fall. I started freezing them because then ice they are all done I can do one big batch of sauce! The first year I didn’t core them before freezing and severely regretted it 🤦🏼♀️ Once the tomatoes are frozen then thawed they get very mushy and hard to deal with. Coring ahead of time if definitely the way to go!
I freeze them in large zip locks or you can use vacuum seal bags. If vacuum sealing, let them freeze first then seal. The vacuum sealer will squish them if not!

Hard Wheat vs. Soft Wheat-
.
There are two primary types of wheat grown: hard and soft. The hard wheat category includes hard red winter wheat, hard red spring wheat, hard white wheat, and durum. Hard wheats are high-protein wheats (typically between 10 and 14 percent protein). The higher the amount of protein, the more gluten the flour can form; the more gluten, the stronger the flour. So a flour milled from hard wheat, with its higher protein content, is better for strong doughs like bread, in which you want to develop a robust gluten network.

By contrast, soft wheats, a category that includes soft red winter and soft white wheats, have a larger percentage of carbohydrates and less proteins than hard wheats, and thus flour milled from soft wheat berries has less gluten-forming abilities. Though these flours lack the protein necessary for producing a strong dough, they are ideal for baked goods where tenderness and a more delicate crumb are desired.

Red Wheat vs. White
.
Red wheat has a hearty, nutty, and slightly bitter flavor, while white wheat is milder and sweeter.

If you are just starting your milking journey I recommend starting with a hard white and soft white wheat berry to start learning with. They will most closely replicate the flours you are used to baking with. Once you have mastered those you can venture into more robust flavors and textures!!
