Why include microgreens in your diet? Microgreens are packed with nutrients. Most varieties are rich in potassium, iron, zinc, magnesium and copper. They are also a great source of beneficial plant compounds like antioxidants). Their nutrient content is concentrated, which means that they can contain more vitamin, mineral and antioxidans than the same quantity of full-size greens . Some research suggests that nutrient levels in microgreens can be up to nine times higher than those found in mature greens.

One of our newest restaurant customers is Booth House Tavern, Olde New Castle's new eatery and brewpub located in an historic red-brick building on Delaware Street.
The Tavern itself offers a unique experience. Out-of-town guests can stay at the historic David Finney Inn next door, and visit the Cafe at DFI in the morning to enjoy Little Goat coffee and fresh pastries throughout the morning and early afternoon.

Omigosh I just saw this recipe for cold green soup on sweetlizzy.ca and it looks amazing. Will someone try it for me and let me know if it tastes as good as it looks!

Throw everything in the blender, put it in the fridge for a couple of hours and serve with your favourite toppings. Easy, refreshing and summery!

Prep Time: 10 minutes
Yield: 2 servings

Method: Blending
Ingredients
3/4 cup full fat coconut milk
3/4 cup water
2 tbsp olive oil
1 tsp grated ginger
1 ripe avocado, cored and peeled
1 small garden cucumber
1/2 a granny smith green apple, cored
2 cups greens - any greens! (I like spinach and a young arugula)
1 jalapeno, deseeded
1 cup packed fresh cilantro
3 tbsp fresh lime juice
1 tsp lime zest
1 stalk green onion, roughly chopped
salt and cayenne pepper to taste

optional garnishes: swirl of olive oil or coconut milk, cilantro, edible flowers, cucumber ribbons, sliced avocado.

Instructions
Place all of the ingredients in the blender and blend until smooth.
Pour into a jar and store in the fridge until chilled. (about 4 hours).
Serve with your choice of garnishes

Each week we deliver fresh herbs in our Farm-to-Table package to our subscribers. Here's a suggestion for what to do with leftover herbs if you don't get a chance to use them all - a DIY herb drying rack, thanks to themerrythought.com.

What you need:
Fresh Herbs
–Metal Hoop
-Jute Twine
-Cotton String
-Scissors
-S-hooks
-Pliers

Directions:
Collect fresh herbs.
-Cut a piece of jute twine. Tie a loop in the twine leaving one short end and one long end.
-Hold the loop against the bundle and wrap the long end of the twine tightly around the bundle.
-Once you’ve wrapped it around a few times, tie it together with the short end and trim excess.
-Take three equal lengths of string and tie each end securely to the metal hoop.
-Take long ends of the string and tie them together, creating a loop at the top. Make sure that the metal hoop is level when tying this knot.
-Use pliers to close one side of the s-hooks around the metal hoop.
-Hang up the rack and then add the herbs.

Here's a great recipe from Scratchinit.com for your kale. Let us know if you try it and if you like it! One person who posts a pic of their home-prepared Kale and Orange/Nutmeg dish will receive a free week added to their home delivery subscription. Winner will be chosen at random.
Red Russian Kale with Orange and Nutmeg
Servings: 2
Ingredients
1 Tbs olive oil
1 bunch Red Russian Kale
Grated zest from one orange
Juice from 1/2 orange
1/8 tsp nutmeg
Salt and Pepper to taste
Instructions
Wash, de-stem the kale, and roughly chop into pieces. Grate zest from orange, then squeeze out juice from half.
In a skillet over medium heat, bring the oil to a shimmer, and add kale. Cook, stirring occasionally until it cooks down and is glossy, about 2 minutes.
Stir in the orange juice, orange zest and the nutmeg. Reduce heat to a simmer and cover with a piece of baking parchment and cook until tender, about 5 minutes.
