I spend my days with folks in the hospitality industry, regularly chatting with restaurant owners, operators, and chefs. I have had the privilege of being able to discuss Issue 5 directly with folks I know and trust and the folks who will be impacted by the outcome of this vote.

🖊️ When you start a business, everyone tells you you need an elevator pitch so you write, you edit, you memorize. But the longer I do this mushroom thing, the simpler the elevator pitch.

Fresh pasta with flour, the last of my cherry tomatoes, swiss chard, fennel, leeks and whatever other farm stuff, shiitake, lions mane, chestnut, and maitake mushrooms from , and some butter. 😊 Feeling grateful for the Fat Moon crew!

Joan, Bethany, Tess, Julie & John show up ready to meet the challenge of the day. This week's challenge? What I call Cooler Zero... This is when we have zero mushrooms in the cooler and we're harvesting "just in time" to meet the orders.

I love Cooler Zero because it means you, our customers, are getting the absolute freshest mushrooms; however, it makes life a tad stressful when you go home in the afternoon just hoping that another 100 # will be ready to harvest the next morning!

🍂 We're celebrating the first day of fall by revelling in our gorgeous pictures from our recent Mushroom Foray including this awesome specimen, a member of the Pholiota genus.

Identifying characteristics of the Pholiota genus:
🔍Yellow, orange, brown coloring
🔍Scaly/slimy caps
🔍Rust or brown colored spores
🔍Caps 5-15mm, Stems 6-12mm
🔍Cool temps
🔍Dead wood

These are a close relative of the Chestnut mushroom that we cultivate (Pholiota Adiposa) and while you may love our chestnuts, DO NOT attempt to forage this one! Guide books recommend a microscope to distinguish between the edible and toxic varieties of Pholiota.
