I love getting up early in the morning when the sun hasn't quite come up and the house is quiet. Dehydrators are drying last nights bone production. This is when I can do my best at candling and weighing eggs. My customers ask me "What is candling" or "Why do you do that?". Well let me show you.
So, from the time the eggs are laid, we gather them, wash them as required by the State of IL for your protection, weigh them, candle them for your protection, and package them. I like to separate them into sizes before candling.
Both of these eggs are large eggs. One shows you a crack in the egg possibly caused by the hen or the gatherer. The other egg is so dark in color it's hard to candle it. But you see if this egg was somehow exposed to any bacteria, it could pose a potential threat to anyone who might not cook it fully or who is immunocompromised. It has now been culled into the garbage and will not be sold to you. We don't have high tech equipment. But we do have common sense. It's important to us to bring you a quality product.
If the dark egg had any cracks or perforations, they would be visible as the light would pass through. We would have a hard time seeing hairline cracks. Some people do like their eggs to be pretty colors so we will package this egg. But, our customers should know, it's much harder to catch flaws in the "pretty" eggs! Check out this pretty dozen with a couple of those rich dark brown eggs.
Both these eggs presented as normal before candling. This is why it is so important to check Every. Single. Egg! And we do!!!!
