Welcome to #hometownmicrogreens your favorite #njlocal #urbanfarmers we thought, let’s kick off spring with this easy one pot dish.
Plant Based Cheese:
1 1/2 cups of cashews soaked for 8 hours & drained ( you can soak them for twenty minutes in boiled water)
3 TBSP of nutritional yeast
1 tsp of white miso
1-2 tsp of turmeric ( I’m a little heavy handed with turmeric because of the health benefits, but not everyone loves the taste)
1-2 TBSP of apple cider vinegar ( it depends on how acidic you like it, I eyeball it)
1 cut up sweet pepper ( I used a combo of smaller pepper, to get the color I wanted)
Blend it up when your ready to serve so the cheese sauce is warm. I suggest adding a small amount of soy milk if you don’t have a vitamix. You can also add jalapeños to make the cheese sauce spicy.
In The Pot:
Cut up your favorite veggies
1-2 cups I used a combo of two varieties of mushrooms
1/2 Romanesco Cauliflower
Put a small amount of water into the pan on medium heat and let simmer
Rinse & Drain the can of lentils and red kidney beans
Add the beans and lentils to the pot when the Romanesco is close to having the fork daily go through it
Cut up 1/4 of an onion and add to the pot
Cut up three cloves of garlic, do not add until you are almost ready to take the veggies out of the pan, garlic burns easily.
You may have to add a little bit of water to the pan throughout the process ( I did not use any oil in my recipe)
Get your flour tortilla ready:
Add a nice serving of the plant based cheese to the wrap
Sprinkle on #hometownmicrogreens #cilantro they may be mini, but they pack a punch 🥊
Once the veggies are almost ready to be taken out add in your favorite spices.
I added:
Paprika
Chilli Powder
Oregano
Garlic Powder
Onion Powder
Pink Himalayan Sea Salt
It’s up to you to add the amount of spices you like, everyone’s taste buds are different.
Store the spices around then add the food from the pan onto your tortilla and enjoy!
