Our thoughts are with the many Ukrainians still in Ukraine two years after the invasion by Russia. While sitting safely in Canada, it's easy to forget that there's a whole other world where people long for just one peaceful day to enjoy life. Our male volunteers cannot leave and may be called soon to serve in the army. Our thoughts are with them and their families, and we hope that this war can end shortly so that they may have their lives back again.

Today we will share a Ukrainian recipe for a juicy rabbit dish made by our volunteer Pasha.
Rabbit recipe....follow the simple steps:
1) Buy 1 full rabbit
2) Wash rabbit and then put it in a saucepan and fill it with water and 100-150 grams of salt.
3) Let it soak for three hours minimum.
4) Rinse the meat with clean water.
5) Heat the frying pan to medium heat.
6) Dip the meat in sour cream and then flour and fry for 10 minutes.
7) Add chopped onions and continue to cook for another 10 minutes.
8) Add 3/4 cup of white wine and simmer for another 10 minutes.
9) Now the final touch! Add the thyme and let it cook for another 30 minutes.

I just got back to Canada after years abroad. I've never had a close relationship with my father but now I'm forced to help him due to his age. Pasha took us to the local open-air market in Kharkiv to buy some fresh meat for Willie. It's nice to see so many people still here despite the war. It reflects the spirit of Ukrainians who live the best they can, regardless of the horrible things happening around them.

Today, I'm showing my father some of the destruction I witnessed while helping in Ukraine with a video I just made. He's 93, and his only view of the world is via the local news here in Canada. I try to explain to him how wars are destroying people's lives right now, but it's hard for him to understand how that can be after he's enjoyed the freedom and a good life for over 50 years, so maybe I'm expecting too much from him.
