I've been fighting through my chronic illness lately and haven’t been able to do my beloved baking. But in the spirit of finding joy, I’ve turned to watercolor painting! 🎨💖 It’s been such a therapeutic outlet for me, and it even has neuro-protective properties that help keep my mind engaged and my spirit lifted.

Not only does it stimulate different areas of my brain, but it also opens up neuro pathways that assist in my healing journey from those pesky electrical storms that surge through my body. ⚡🌈

🌟 Homemade Beef Stew Canning Recipe ✨🌟

There's nothing quite like the comfort of a hearty beef stew, especially when it's made right in your own kitchen! 🌿🥘 Preserving this delicious dish through canning not only brings the joy of homemade meals to your pantry, but it also ensures the flavors stay fresh for whenever you need them. 🥫💕

Ingredients:
- 4-5 lbs stewing beef, cubed
- Olive oil for browning
- 12 cups potatoes, cut into chunks
- 8 cups carrots, sliced
- 3 cups onions, chopped
- 3 cups celery, chopped
- 12 cups beef stock
- Season to taste: salt, thyme, black pepper

Directions:
1. Prep: Heat your pressure canner and get jars ready.
2. Brown the Beef: Sear the beef in olive oil until just browned. No flour needed!
3. Simmer: In another pot, bring the beef broth to a simmer and combine with the meat and veggies.
4. Fill Jars: Use a slotted spoon to pack meat and veggies into jars, then pour stock over to maintain 1-inch headspace.
5. Process: Seal the jars and can at the appropriate pressure for your altitude (75 mins for pints, 90 mins for quarts).

I brought my sourdough starter “Amber” out of the fridge after her LONGEST hibernation - TWO MONTHS! 🧡 Named after my great grandmother, who was an original chicken-raising, gardening, canning homesteader with a heart of gold back when no one even called themselves homesteaders. 🍅🐔

In just three days of feeding, bubbles have started to form! 🙌 Sourdough Starter Amber isn’t dead, y’all! 🎉 Sadly, I’m not back to baking quite yet because I’m still in the throes of my flare-up, so back to the fridge she goes for now. But this is a reminder that sourdough can meet you where you are in life! 💖 If you need a break or aren’t in a baking season, it can wait! 🕰️

Let’s be real—homesteading doesn't require vast stretches of land; it’s all about doing things at HOME rather than running to the store. In a world that constantly nudges us to “buy, buy, buy,” adopting a homesteading mindset can feel like a radical act of rebellion! ✊✨

Muscovies are truly wonderful ducks! Here are some fun facts about these lovable birds:

Hey everyone! I’ve been getting so many messages asking when we’ll be resuming our Sourdough 101 class, and honestly, I wish I could say TOMORROW because I absolutely love teaching! 💕

However, I’m currently navigating some serious chronic health issues that are affecting my brain, heart, and overall mobility. While I truly believe I’ll be back in the kitchen teaching one day, that day is not today or tomorrow.

🐾✨ Exploring the great outdoors and visiting farms often introduce us to the incredible sight of large dogs keeping watch over fields and livestock. These dedicated companions are known as Livestock Guardian Dogs (LGDs), and they play a crucial role in farming, helping to protect our animals from predator threats and fostering a serene environment for livestock.

The bond between humans and LGDs dates back thousands of years, with evidence of this ancient practice seen in various cultures around the globe. Farmers recognized the need for protection, and naturally, certain breeds were selected for their guarding instincts, loyalty, and protective nature.

However, it’s important to note that raising an effective LGD is a careful practice. You can’t simply toss a puppy into a field and expect it to instinctively know its job. It takes time to teach them basic commands and establish a strong bond. As their shepherd, it’s vital for them to recognize you as their leader and mentor.

Not all breeds are suitable for livestock guardian work; some breeds possess the natural instincts and characteristics needed for this demanding role.

It’s a trying time as we travel far from the comforts of our farm to a hospital in a big city, seeking answers that we hope will bring us closer to healing. This journey has been incredibly painful, filled with frustrations—especially with the challenges posed by the VA and some misunderstandings surrounding federal laws regarding service dogs. It feels like a fight every step of the way—navigating food allergies, ensuring my safety from potential poisons, dealing with the transition of my medical records, and enduring the discomfort of the testing process.

Despite the hurdles, we hold on to hope that we will find some answers that lead to effective treatment. It’s been difficult being a medical enigma, but I refuse to let that define me. Gratitude, love, hope, and a search for joy are the glue that keeps me together during this tough time.

I am incredibly thankful for my service dog, Cinderella, who has been a source of comfort and strength, performing her duties with honor. Ryan’s steadfast support has been invaluable, and the kindness shown by the nursing staff has lifted my spirits. Our loving friends and family at home have stepped in during this challenging time, providing support in ways we are forever grateful for and showering us with love.

I can’t wait to return home, back to the familiarity of our farm, where peace awaits. Until then, we carry on with hope in our hearts.
