FRESH APPLE CAKE RECIPE
1 c vegetable oil
2 c sugar
3 eggs
3 c flour
1 tsp baking soda
2 tsp vanilla extract
1 c chopped pecans
3 c peeled and chopped apples
Preheat oven to 350 degrees. Grease a 9 x 13" pan. Combine oil, sugar, and eggs. Stir in flour and baking soda. Add vanilla, pecans, and apples. Spread in prepared pan and bake for 45-50 minutes. Cool for 2 hours. Then prepare frosting.
Frosting
1/2 c butter
1 c brown sugar, packed
1/4 c evaporated milk
1/2 tsp vanilla
Boil all ingredients in a small saucepan for 2 minutes. Set pan in bowl filled with ice water. Beat icing until of spreading consistency. Spread over top of cake

Creamy Swiss Chicken Bake
Ingredients
4-6 Boneless Skinless Chicken Breast
6-8 Slices Swiss Cheese (Mozzarella works too)
½ cup mayonnaise
½ cup sour cream
¾ cup grated Parmesan Cheese (divided)
½ tsp. salt
½ tsp. pepper
1 tsp. garlic powder
Preheat oven to 375.
Pat chicken dry and place in a greased 9x13 pan.
Add sliced cheese on top of chicken breasts.
In a bowl mix mayonnaise, sour cream, ½ cup Parmesan cheese, salt, pepper and garlic powder. Spread this over chicken and sprinkle with remaining Parmesan cheese.
Bake for 1 hour.

BAKED SPAGHETTI & MEATBALLS
Grab your Cast Iron Skillet!! This is SO good-your family will absolutely love this for dinner!!
Ingredients
Meatballs (I used about 1½ doz homemade meatballs) **Meatballs were fully cooked
24 oz jar marinara sauce
½ yellow onion (diced)
3 cloves garlic (crushed)
1 tsp Italian seasoning
2 TBSP olive oil
3/4 # spaghetti noodles
1-2 cups grated cheese (I used half colby-jack, half mozzarella)
½ cup grated Parmesan
HEALTHY MEATBALLS
(makes about 20 huge meatballs)
Ingredients:
2.5 lbs ground chicken BREAST
3 egg whites
1 cup dried quick oats
2 medium green bell peppers
1 purple onion
2 TBS paprika
1 TBS chopped garlic
1 TBS dried basil
1 TBS oregano
a pinch or two of salt
(You can basically season it with your favorite spices)
DIRECTIONS:
Mix all of the ingredients together in a big ole bowl. Spray a muffin tin (or regular pan) with PAM. Shape into balls and place each ball in a muffin cup. Cook at 375F for about 35 min.
Instructions
In a large cast-iron skillet (10" worked fine), sauté onions in olive oil over med/low heat. Add in garlic and continue sautéing until onions are tender. Add cooked meatballs. Add marinara sauce and tsp Italian seasoning.
Heat over med/low heat for about 20-30 minutes. In a separate large pot, cook spaghetti noodles according to package directions (under cook by 2 minutes). With a large slotted spoon, scoop meatballs from sauce and set aside.
Scoop cooked spaghetti (with a large slotted spoon) into marinara sauce. Add in about ½ cup pasta cooking water. Gently stir until pasta is fully coated with sauce. Add cooked meatballs to top of spaghetti. Top with grated cheese & Parmesan cheese.
Bake at 350* for approx 20-30 minutes or until hot and bubbly and cheese is melted.

GERMAN CHOCOLATE CAKE
1/2 cup boiling water
4 ounces sweet cooking German chocolate
2 cups sugar
1 cup butter, softened
4 egg yolks
1 teaspoon vanilla
2 1/2 cups cake flour
1 teaspoon baking soda
1 teaspoon salt
1 cup buttermilk
4 egg whites, stiffly beaten
Coconut Pecan Frosting
1 cup sugar (1 1/2 cups)
1/2 cup butter (3/4 cups)
1 cup evaporated milk (12 oz. can)
1 teaspoon vanilla (1 1/2 tsp)
3 egg yolks (4 egg yolks)
1 1/3 cups flaked coconut (2 cups)
1 cup chopped pecans (1 1/2 cups) (optional)
Heat oven to 350 degrees F. Grease 2 9-inch square pans or 3 8-inch round pans.
Pour boiling water on chocolate, stirring until chocolate is melted; cool. Mix sugar and butter in large mixing bowl until light and fluffy. Beat in eggs yolk, one at a time. Beat in chocolate and vanilla on low speed.
Mix in flour, baking soda and salt alternately with buttermilk, beating after each addition until batter is smooth. Fold in egg whites.
Divide batter among pans. Bake square pans 40-45 minutes or round pans 35-40 minutes. Check for doneness with toothpick in center. Cool and top with Coconut-Pecan Frosting.
Coconut Pecan Frosting: Mix sugar, butter, milk, vanilla and egg yolks in saucepan. Cook over medium heat, stirring occasionally, until thick, about 12 minutes. Take off heat. Stir in coconut and pecans. Beat until spreading consistency. Allow to cool & thicken before icing cake.

Blueberry Biscuits! These are excellent!!!! So easy and soooo good! Recipe is hard to find so here it is:
You will need:
2 cups Flour
4 teaspoons baking powder
1 cup milk, cold
1/3 cup sugar
5 tablespoons of butter (cold or frozen)
1 teaspoon salt
3 ounces blueberries, fresh or dried
GLAZE:
1 cup powdered sugar
1/8 cup water
1 teaspoon vanilla
1/2 teaspoon lemon juice
Directions
Preheat oven to 450°F.
Mix salt, sugar, flour, and baking powder in a bowl. Add the super cold milk into dry ingredients and mix.
As dough begins to form take each tablespoon of hardened solidified butter and break chunks off and spread evenly over dough. Fold dough, and knead, repeat until all butter is spread in chunks evenly throughout dough. Carefully fold in the blueberries.
Move dough to floured cutting board and roll flat to about ¼ – ½ thick (or to desired thickness) and cut approximately 6 Blueberry Biscuits with a biscuit or cookie cutter. If you notice the butter starts to melt (hot kitchen) during this process it may be necessary to return the dough to the freezer for 10-15 minutes. Do not exceed 20, as the baking powder’s 1st stage may become inactive past that. Place in oven and bake for about 7-12 minutes. Melt 1 tablespoon of low-fat butter in the microwave, and paint finished biscuits with a pastry brush. Mix glaze ingredients in a bowl, and drizzle over Blueberry Biscuits with a fork. Enjoy !!!!
