I always have some version of marinated tomato happening in my fridge. My mother and my Abuela always served a version of this with larger tomatoes and sometimes avocado...also delicious! But this simple mix of cherry tomato, shallot, olive oil, and S & P is the perfect addition to so many things. Top a freshly grilled piece of fish or even add to a pan and add some pasta for a quick and easy meal. Today I added it to some diced watermelon with feta and mint and WHOA! SO GOOD! Here’s the recipe:
4 cups chunks of watermelon
1 small shallot - thinly sliced
1 pint of cherry tomato
Olive oil, salt, and pepper to taste
& then top it off with mint and feta

One time someone told me a story…
Their friend would always complain they had no time to do anything. No time for healthy food prep. No time to exercise, no time to work on their passions… after some time, this friend sadly lost their job that was only a 10 minute commute.
The friend frantically searched for a new job and found one but… it was almost an hour drive each way. That was 2 hours they’d have to commute every day to get to work but the friend needed it do they took it. Somehow, the extra time magically appeared for them to get to work each day.
Moral of the story?! Almost always…. we have the time. It’s there, we just don’t see it until we take a deeper look at our priorities and really ask ourselves what is really most important to us? Same goes for when someone gets sick and need to change their diets. It’s easier to make the time now because you want to, then to force the time in later because you have to.

Grilled Peach & Burrata Flatbread 😍🍑🍕 Grilling pizza dough is surprisingly easy and a delicious way to make pizzas and flatbreads at home! To make this one, we topped it with pesto, thinly sliced heirloom tomatoes, grilled peaches, burrata, arugula, basil, olive oil, hot honey, flaky salt and pepper. It was SO good and a must try summer recipe! It only took us 20 mins from start to finish, so it’s perfect for any occasion.

Ingredients:
8-10 oz pizza dough
1/3 cup pesto
2 peaches, sliced
1-2 heirloom tomatoes, thinly sliced
4-6 oz burrata
1/2 cup arugula
2 tbsp thinly sliced basil
Olive oil
Hot honey (or regular honey)
Flaky salt and pepper
Directions:
Preheat your grill to medium. Oil the grates well (this is essential otherwise your dough may stick).
Roll pizza dough into a long rectangle. Dock the dough with a fork. Place on the oiled grates and cook for 3-5 minutes, until it easily releases from the grill and has distinct grill marks. Flip and cook for another ~3 minutes, then remove from the grill.
While the dough is on the grill, place peach slices on the grill and grill for ~3 mins on each side.
Spread pesto on top of pizza dough, then top with peaches, tomatoes, burrata, arugula and basil. Drizzle with olive oil and honey, then sprinkle with salt and pepper. Slice and enjoy!

This recipe is the perfect side for chicken, pork, steak, or fish. I also love adding it to a salad or on top of toasted sour dough. Full recipe 👇🏼
✨Baked Tomatoes✨
▫️3 ½ cups of cherry tomatoes
▫️3-4 garlic cloves, minced
▫️1 tablespoon of minced Italian parsley
▫️1-2 tablespoon of olive oil
▫️1 teaspoon of salt
▫️1/2 teaspoon pepper
▫️2 tbsp fresh basil, chopped
▫️2-3 tablespoons feta cheese
* Preheat the oven to 375 degrees F
* In a large baking dish add all the ingredients except the fresh basil and feta and thoroughly mix together
* Cook for 20-25 minutes. Top with fresh basil and feta.

4TH OF JULY LAYERED MARGARITAS // this is the easy version of this recipe, using premade wines margarita! I also have a homemade margarita recipe that I’ll share to stories. I’m also teaming up with some friends to share a few fave 4th of July / summer recipes, check my stories for those!
INGREDIENTS:
1 7lb bag ice
3 bottles @drinkrancho (or other brand) wine margaritas - strawberry, lime and blueberry flavored
1/2 cup coco real
INSTRUCTIONS
1) Fill a blender with ice and add premade margaritas (blender sizes are different but for my blender it was 8 cups ice to 2.5 cups margarita mix). Blend on high until slush consistency is reached. Pour into the bottom third of your plastic solo cups and allow to freeze for at least 30 minutes (this keeps layers separated).
2) after the half hour, repeat process for white layer, but add in coco real. Pour into cups, leaving 1/3 empty. Freeze for at least 30 minutes. Repeat process for blue layer. Freeze until ready to serve. Once ready, serve and enjoy! #margaritas #4thofjuly #july4th #cocktailrecipes
