I have read that room temperature plays a big part in honey crystalizing.

Both jars have been in the basement since last Fall. The jar on the left was brought into the kitchen yesterday. The jar on the right remained in the basement. Overnight our basement must have reached that ideal temperature, the jar left in the basement began to crystalize over-night.

I've also heard that many people think their honey is bad when it crystalizes. It's not bad, just easier to spread or whip. You can gently warm a honey jar in water if the crystalizing bothers you. I shared an article about heating honey.
