So excited for my friend who just got her first clutch of baby sun conures… I’m a lil jealous, cuz I had to significantly downsize my flock. But I am so excited for her. Hopefully I’ll have pics of her babies in the not so far future, so I can help her find new places for them to perch… u know, once it’s time for them to “leave the nest” and “fly the coop”. I’m also looking forward to helping her with first time hand feeding… so exciting.

Cream Cheese and Spinach Stuffed Chicken Breasts

Decadent Spinach and Cream Cheese Stuffed Chicken

Ingredients:

4 boneless, skinless chicken breasts
1 cup fresh spinach, chopped
4 oz cream cheese, softened
2 cloves garlic, minced
1/4 cup grated Parmesan cheese
1 teaspoon Italian seasoning
Salt and pepper to taste
2 tablespoons olive oil
1/2 cup breadcrumbs
1/2 cup shredded mozzarella cheese
Directions:

Preheat oven to 375°F (190°C).
In a bowl, mix together spinach, cream cheese, garlic, Parmesan cheese, Italian seasoning, salt, and pepper.
Cut a pocket into each chicken breast and stuff with the spinach mixture. Secure with toothpicks if necessary.
Heat olive oil in a pan over medium heat. Sear chicken breasts until golden, about 3 minutes per side.
Transfer chicken to a baking dish. Sprinkle breadcrumbs and mozzarella cheese on top.
Bake for 20-25 minutes, or until chicken is cooked through and cheese is golden.
