Quick breads are great for breakfast, especially on a busy holiday morning, as they can be baked several days ahead. This one also makes a nice addition to a holiday brunch or dinner.
CRANBERRY NUT BREAD
1 cup fresh cranberries, chopped
1/2 cup nuts, chopped
1 Tbsp. grated orange rind
2 cups all-purpose flour
1 cup sugar
2 tsp. baking powder
1 tsp. baking soda
pinch of salt
1 large egg
4 Tbsp. shortening
3/4 cup orange juice
Preheat oven to 350 degrees
Sift together flour, sugar, baking powder, baking soda, and salt
Cut in shortening, add egg and orange juice just till moistened
Fold in cranberries, nuts, and orange rind.
Spoon into a 9x5" loaf pan. Bake 1 hour
