Early morning lacto-fermentation. We got bubbles! Lactic acid fermentation is a metabolic process by which glucose or other 6-carbon sugars are converted into cellular energy. It’s an anaerobic fermentation that occurs in some bacteria. In short, this grain has been soaking for a minimum of 12 hours (in this case closer to 24) in order to “bloom” any bacteria, mold or yeast. We will strain the soaked grain, divide it into 3 lb batches to then pressure cook for a minimum of 3 hours at 15 PSI to destroy the contaminates we purposely bloomed.
