Roost'n Roots Craig and Jennifer started their homestead in March of 2019 with a flock of chickens and two guineas.

They now have ducks and rabbits and are working hard to establish their gardens for fresh food year round.

Thanks to Craig's determination to maintain his independence, Jennifer cleverly designed and installed 3 pullout drawers, thereby facilitating effortless access to our spices. Although we compromised on storage space, the benefits far outweigh the loss, thus empowering Craig to effortlessly locate what he needs without struggling and getting frustrated. Given that we have over 55 different spices and blends, Jennifer labeled all the lids for easy identification.

We would like to extend our gratitude to Craig's son, Christian, for undertaking the manual labor involved in our six-filter water system installation. Craig successfully completed all tube connections, but due to physical limitations, he required assistance with climbing under the sink to mount the system. Together, they identified and rectified two minor issues. Following twenty-four hours of system usage, Christian will construct an enclosure to facilitate easy access and maintenance.

** Jennifer Nichols found a great savings on this unit that couldn't be passed up.

One of our most satisfying foods is homemade yogurt. It's super easy with an Instapot and yogurt strainer. We've made yogurt with a pot and cheesecloth but it does take more time and labor. Of course, there is nothing wrong with doing so, we prefer to trade-off that time to do other things.

Below are the ingredients, instructions and kitchen tools to make truly amazing yogurt. 🤬
1) Large instapot with yogurt setting for 8 hours 30 mins
2) 1-2 gallons of good quality ultra pasteurized milk
* Jennifer and I use Homeland Creamery - Heavy Cream
- this is not Ultra pasteurized but it works great for us
3) We let the Yogurt cool down inside the Instapot for an hour
4) Afterwards we pour the Yogurt into the Yogurt strainer
5) We refrigerate the Yogurt and let the whey^^ drain to the bottom of the strainer for 2-3 days.
6) We stir the Yogurt once per day before we eat it

^^ whey is the liquid leftover after draining the Yogurt. Jen and I enjoy using whey for making: French Toast, Scrambled Eggs, Healthy Shakes, Dog Food Meals and Snacks, and many other uses.
